Oats + Nut Butter + Your Favorite Mix-in

You choose! Fold in whatever you like! Change it up every time you make them to create a new snack idea! I love the salty goodness of crushed pretzels my meal prep cookies with sunflower seeds and goji berries. You could use any nut butter, crushed nuts, raisins, even sunflower seeds.

Meal Prep Cookies

One Bowl, gluten free, vegan, moist, and yummy. These meal prep cookies are a base cookie that can be easily customized with your favorite mix-ins!

Ingredients
  • 3 cups old fashioned oats
  • 1 cup nut butter (almond, peanut, sunflower, cashew)
  • 1 cup honey (if not vegan) or maple syrup
  • 1/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 cup any combination of your choice of nuts, dried fruit, chocolate chips, or crushed pretzels
Directions
  • Step 1 Heat nut butter in a small saucepan over low heat until it melts and then add the honey or syrup, stir well, and transfer to a mixing bowl.
  • Step 2 To the mixing bowl, add the remaining ingredients and gently stir until well combined.
  • Step 3 Shape into cookies and place on a parchment lined cookie sheet. Refrigerate or freeze until firm and then eat!
  • Step 4 Leftovers should be wrapped individually and kept in freezer or refrigerator until ready to eat.
