I love granola. I also love almond butter. You know what I also love? A healthy, homemade snack ready in 30 minutes that I can have around for that perfect crunch to add to my yogurt, serve for a brunch or breakfast party, or give as a gift! Store-bought granola can have a ginormous list of ingredients that have no business being in a bag with wholesome oats + nuts. Check your labels carefully if you buy the store-bought kind or make your own!

Tara’s Tips for Almond Butter Granola Recipe Perfection:

 

 

 

  • The low heat is a necessity. This granola will burn if you aren’t mindful of it, so put your pan on the center rack of your oven and set a timer to give it a gentle turn/stir during the 25 minutes cook time.
  • Use natural almond butter. This is a MUST. So many nut butters contain unnecessary oil, sugar, and peculiar ingredients that are unnecessary. Your almond butter should have one ingredient: almonds + maybe some salt.
  • Use old fashioned rolled oats. Steel cut or quick cook do not work in this almond butter granola recipe.
  • Measure the coconut oil in its melted state. If you don’t like (or have) coconut oil, you can substitute vegan butter.
  • Toppings! Add what you love. Dried fruit, mini vegan chocolate chips, coconut, extra almonds or even extra cinnamon. I am a granola purist. I am not a fan of mix-ins but I am in the minority on that (I know).
  • Can substitute honey for the maple syrup if you are not vegan.
  • What to do with your almond butter granola? Eat it as is, put it in a cute jar and give it as a gift, serve it at brunch or a breakfast gathering (as I did in the image above), sprinkle over yogurt or milk of choice.

Almond Butter Butter Granola Recipe

: 4 cups

Super Easy Peanut Butter Granola! The EASIEST granola you will ever make! Ready in 30 minutes + is crunchy + vegan + gluten free + packed with plant-based protein + fiber. Peanut butter + oats perfection!

Ingredients
  • 2 cups organic old fashioned oats (use GF if gluten free)
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1 tbsp melted coconut oil (be sure to measure in its melted state)
  • 1/2 tsp cinnamon
  • 1/4 cup almonds (use up to 1/2 cup if desired, can be slivered or whole)
  • optional toppings after baking: coconut flakes, dried fruit, or mini vegan chocolate chips
Directions
  • Step 1 Preheat oven to 325 degrees
  • Step 2 Place oats in a large bowl and set aside.
  • Step 3 Place the almond butter, maple syrup, coconut oil and cinnamon in a small microwave safe bowl and heat in 20 second increments until melted. Mix well until fully combined and pour over the oats. Add almonds and stir again. Spread your mixture onto a parchment paper or silicone lined baking sheet. Be sure to spread evenly and pack down.
  • Step 4 Bake in 325 degree oven for 25 minutes. Turn your granola with a spatula two times during the cooking the process while protecting the clumps. Do not over-mix or you will lose your clumps.
  • Step 5 Allow to cool for 5 minutes and sprinkle on optional toppings.
  • Step 6 Leave on baking sheet until fully cooled. Once cooled, break up into desired size chunks and transfer to an airtight glass container or serve with yogurt or milk of choice or simply eat as is! Enjoy!
