Yes, I did! I created a cookie that is perfect for any food allergy or dietary restriction! You can eat it for breakfast or a snack or dessert.Β  If you need to, you can add nuts, cranberries, vanilla, cinnamon or whatever! Fold in your optional ingredients to create your very own customized 3 Ingredient cookies!

Got busy mornings? Store these in the freezer and while you are getting ready reheat them. What you have is a mini bowl of oatmeal that could be confused for banana bread or a chocolate chip cookie πŸ™‚

3 Ingredient Cookies

Bananas, Oats, Chocolate Chips (regular or vegan!). That's all you need for perfectly baked goodness for breakfast or a snack.

Ingredients
  • 2 Ripe Bananas
  • 2 cups gluten free old fashioned oats
  • 1 cup dairy free chocolate chips or mini chips
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 Place 2 bananas in a medium size bowl and mash with a fork until they are smooth. If using frozen bananas, thaw out and mash.
  • Step 3 Add oats and stir until oats are fully coated with the banana and then stir in the chocolate chips. Add any optional add-ins at this time. *optional: pulse oats in food processor to grind down to oat flour or partially grind down. I leave usually leave oats as is for texture but these work both ways*
  • Step 4 Spoon batter in one tablespoon size portions onto a parchment paper lined baking sheet with one inch in between cookies.
  • Step 5 Bake in 350 degree oven for 12-15 minutes or until cookies are no longer wet in appearance. Allow to cool on a wire cookie rack and then eat or serve. Can freeze for busy mornings or store in airtight glass container in the refrigerator for 7 days.
