  • Measure your oats carefully! Too many oats in this recipe will make the cookies turn out dry instead of moist + chewy.
  • Old fashioned rolled oats are what we need here.Β  Not the instant in the little pouches, not the quick cooking, not steel cut.
  • Grate the carrots yourself.Β  The pre-shredded ones in the grocery store are too dry for this recipe.Β  Bust out the box grater or use your food processor but don’t skip this part.Β  Your Carrot Cake Oatmeal Cookies will just not be the same!

Carrot Cake Oatmeal Cookies (Vegan!)

Carrot cake in a cookie?!?! YES!!! These Carrot Cake Oatmeal Cookies are fully vegan, made without eggs + turn out chewy + moist + perfect every time!

Ingredients
  • 1 1/2 cups oat flour (sub all purpose flour)
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 cup old fashioned rolled oats
  • 1/2 cup melted vegan butter (I use Miyoko's, use real butter if not vegan)
  • 2 tbsp plant-based milk (I use oat milk, sub dairy milk if not vegan)
  • 1 cup raw turbinado sugar (can sub brown sugar)
  • 2 tsp vanilla extract
  • 1/2 cup freshly grated carrots
Directions
  • Step 1 Preheat oven to 350 degrees F.
  • Step 2 Whisk the flour, salt, cinnamon, and baking soda together in the bowl of a stand mixer or a medium size bowl. Once combined, add in the oats.
  • Step 3 Next, fold in the melted vegan butter, plant-based milk, sugar, and vanilla. Mix ingredients together on low with stand mixer or electric mixer until fully combined.
  • Step 4 Mix on low until a dough has formed.
  • Step 5 Sprinkle in the carrots and mix by hand or on the lowest setting until the carrots are mixed in.
  • Step 6 Using a cookie scoop or measuring spoon, scoop 1 1/2 tbsp of cookie dough onto a parchment paper or silicone baking sheet lined cookie sheet, spaced evenly apart. It is best to roll each one into a ball and flatten the top.
  • Step 7 Bake in a 350 degree oven for 12 minutes or until the edges are just golden brown to your liking.
  • Step 8 Store any leftovers in a glass airtight container for up to 10 days. Enjoy!
