So …. what is in these Healthy Pumpkin Cookies?

 

Bananas! Maple Syrup! Pumpkin! Cinnamon! I replaced the sugar in a typical pumpkin treat with a touch of maple syrup, a few spoons of coconut sugar, and 2 mashed ripe bananas 🍌🍌. Bananas are the perfect swap for eggs or sugar in a recipe. If you are egg free, this is an essential trick to maintain the moisture in eggless baking. Baking without refined sugar can be challenging and takes some getting used to. Coconut sugar is an awesome alternative. You will not miss the refined sugar in these cookies, I promise! Tara’s Tips for Perfect Healthy Pumpkin Cookies:

  • As you can see from the photos, I couldn’t decide to top these cuties with chocolate chips or walnuts. I even kept a few plain (which were eaten before being photographed πŸͺ!) Do what you love! If you love chocolate chips and want an extra hint of sweetness, top these healthy pumpkin cookies with mini chips right before they go into the oven. If you love nuts, why stop at walnuts? You can use slivered almonds or even pumpkin seeds. Want to get really crazy? Fold your toppings into the batter and bake the goodness right in 🧑.
  • For my meal prep friends, these are great for lunchboxes or hikes or to toss in your backpack for travel. Make a double batch and freeze them in individual bags. You don’t need to heat them, they will thaw out nicely on their own in about 20 minutes.

Healthy Pumpkin Cookies

Cookies that still taste good but are made without refined sugar, gluten, dairy, eggs! Healthy Pumpkin Cookies perfect for meal prep, lunchboxes,or dessert!

Ingredients
  • 1 ripe mashed banana
  • 1/2 cup pumpkin puree
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 3 tbsp melted coconut oil or vegan butter
  • 1 cup oat flour or whole wheat flour
  • 1 tsp pumpkin pie spice
  • 2 tbsp coconut palm sugar
  • 2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup dairy free mini chocolate chips
  • 1 cup coarsely chopped walnuts
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 Mix all dry ingredients together in a small mixing bowl.
  • Step 3 Mix all wet ingredients in a medium size mixing bowl.
  • Step 4 Add the dry ingredients to the wet ingredients, stir by hand until fully combined.
  • Step 5 Fold in chocolate chips and/or walnuts + stir.
  • Step 6 Using a cookie scoop or a spoon, drop cookie batter onto a parchment paper lined (or use a silicone baking mat) cookie sheet. Evenly space the cookies on the sheet.
  • Step 7 Bake in a 350 degree oven for 15 minutes. Remove from oven, let sit on cookie sheet for 5 minutes. Transfer to cookie cooling rack and let cool for an additional 5-10 minutes.
  • Step 8 Store leftovers in an airtight glass container. Also can freeze in individual portions for up to 3 months.
