Peanut Butter Blondies (Vegan!)

Sometimes you just need a blondie.  No other dessert will do.  A thick, gooey, chewy bar that isn’t a cookie but isn’t a brownie.  These Peanut Butter Blondies can be whipped up in under 30 minutes with a few ingredients that I am sure you already have in your kitchen! The best part? The icing! The easiest, creamiest, most perfect icing ever to be spread on a blondie.  Yep, that good.

Tara’s Tips For Perfect Peanut Butter Blondies:

  • Leftovers? Store them in a glass container in the refrigerator, heat up in the microwave for 20 seconds. Alternatively, you can make these and freeze them for another day you might need a blondie pick-me-up.  Cut them into squares first and freeze them in individual baggies or containers. Defrost them out on the counter or in the microwave.
  • Substitute another type of nut butter in these if you like.  I have not tested them with other nut butters so if you try it, leave a comment below and let me know.
  • Flour: the best flour for this recipe is all purpose flour but whole wheat pastry flour or oat flour both work fabulously as well.
  • Not vegan? Use a real egg in place of the flax egg and regular butter.  Leave me a comment if you try it, I’m sure other vegetarians will appreciate it!
  • A blondie is not quite a cookie but not quite a brownie.  That being said, watch these after 15 minutes.  You don’t want to overcook them so that they dry out but too underdone will leave them too gooey (if there is such a thing!).

The Icing!

5 ingredients & 5 minutes.  Mix everything together with a hand mixer until creamy and there you have it! The smoothest, creamiest, dreamiest vegan icing you could ever ask for! My one piece of advice is not to add too much milk.  It shouldn’t need much more than 2 tablespoons.  Be careful or it will be runny!

Vegan Peanut Butter Blondies

Make the perfect vegan peanut butter blondies with just a few simple ingredients and 30 minutes!

Ingredients
  • For The Blondies:
  • 1 flax egg (one tbsp ground flaxseed meal with three tbsp of water) or sub regular egg if not vegan
  • 1/2 cup melted vegan butter
  • 1 cup brown sugar
  • 2 tsp vanilla
  • 1/2 cup peanut butter
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/4 cup flour (all purpose, whole wheat pastry four, or oat flour)
  • 1/2 tsp baking powder
  • For The Icing:
  • 1/4 cup softened/room temperature vegan butter
  • 1 1/2 cups powdered sugar
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1 tbsp plain unsweetened plant-based milk (I used oat milk)
Directions
  • Step 1 Preheat oven to 350 degrees F.
  • Step 2 Grease an 8×8 square baking pan or line with parchment paper.
  • Step 3 Make flax egg and set aside to form a gel-like consistency.
  • Step 4 In a large bowl, or using a stand mixer, combine melted butter, brown sugar, and vanilla. Add in the peanut butter and gently stir until all ingredients well combined. Then, add in the flax egg and stir again.
  • Step 5 Add all the remaining blondie ingredients and give everything a good stir.
  • Step 6 Pour blondie batter into the greased 8×8 baking pan and spread evenly.
  • Step 7 Bake in 350 degree oven for 15-20 minutes or until a toothpick comes out clean when inserted in the center.
  • Step 8 While blondies are baking, combine all icing ingredients in a medium bowl and beat with a hand mixer until smooth, adding additional plant-based milk as needed to form a thick icing consistency. Careful not to add too much milk!
  • Step 9 When blondies are cool, apply desired amount of icing, cut into squares + enjoy!
