30 minutes start to finish? For a homemade blondie? Yes and yes! Healthy almond butter combined with oat flour, a touch of cinnamon, and loaded up with chocolate chips.  These are a regular Saturday afternoon treat in the MVF kitchen.  These eggless almond butter blondies are awesome straight out of the oven, leftover the next day, snuck into a lunchbox on Monday morning, or wait … are there usually leftovers???

Tara’s Tips For Perfect Eggless Almond Butter Blondies:

  • Substitute peanut butter in these if you like!
  • Not vegan? Use a real egg in place of the flax egg and regular butter.  Leave me a comment if you try it, I’m sure other vegetarians will appreciate it!
  • Flour: I use oat flour in these blondies. You can substitute all purpose flour or whole wheat pastry flour, both work fabulously.
  • Leftovers? Store them in a glass container in the refrigerator, heat up in the microwave for 20 seconds. Alternatively, you can make these and freeze them for another day you might need a blondie pick-me-up.  Cut them into squares first and freeze them in individual baggies or containers. Defrost them out on the counter or in the microwave.

  • A blondie is not quite a cookie but not quite a brownie.  That being said, watch these after 20 minutes.  You don’t want to overcook them so that they dry out.  Too underdone will leave them too gooey (if there is such a thing!).
  • Mix-Ins: I included 1/2 cup chocolate chips in the recipe.  That is how I love to make mine.  I also will put an additional 1/4 of chips on top if I am in the mood for an extra chocolatey treat.  You could also mix in chopped almonds.
  • These are also awesome with icing on top! Is there anything that doesn’t get better with icing on top? 🤣 The recipe for THE BEST vegan icing is included in this recipe for my  Peanut Butter Blondies.

Eggless Almond Butter Blondies

Make the perfect vegan + eggless almond butter blondies with just a few simple ingredients and 30 minutes!

Ingredients
  • 1 flax egg (one tbsp ground flaxseed meal with three tbsp of water) or sub regular egg if not vegan
  • 1/2 cup melted vegan butter
  • 1 cup brown sugar
  • 2 tsp vanilla
  • 1/2 cup almond butter
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/4 cup flour (all purpose, whole wheat pastry four, or oat flour)
  • 1/2 tsp baking powder
  • 1/2 cup dairy free chocolate chips (optional)
Directions
  • Step 1 Preheat oven to 350 degrees F.
  • Step 2 Grease an 8×8 square baking pan or line with parchment paper.
  • Step 3 Make flax egg and set aside to form a gel-like consistency.
  • Step 4 In a large bowl, or using a stand mixer, combine melted butter, brown sugar, and vanilla. Add in the almond butter and gently stir until all ingredients well combined. Then, add in the flax egg and stir again.
  • Step 5 Add all the remaining blondie ingredients (plus chocolate chips if using) and give everything a good stir.
  • Step 6 Pour blondie batter into the greased 8×8 baking pan and spread evenly.
  • Step 7 Bake in 350 degree oven for 20 minutes or until a toothpick comes out clean when inserted in the center.
  • Step 8 While blondies are baking, combine all icing ingredients in a medium bowl and beat with a hand mixer until smooth, adding additional plant-based milk as needed to form a thick icing consistency. Careful not to add too much milk!
  • Step 9 When blondies are cool, cut into squares + enjoy!
