Cranberry Peanut Butter Energy Bites

These little cuties are the perfect bite-size snack for quick energy. Ideal for post-workout, pre-workout, lunch boxes, busy mornings or any time! No bake, vegan, gluten free, dairy free, easy, and healthy!

Ingredients
  • 1 cup organic old fashioned oats
  • 1/2 cup nuts (peanuts, cashews, almonds, walnuts - whatever you like! I like to use salted peanuts)
  • 1/4 cup nut butter (peanut, cashew, sunflower, almond - they all work)
  • 1/2 tsp vanilla extract
  • 1/4 cup maple syrup
  • 2 tbsp chia seeds
  • 1/2 cup dried cranberries
Directions
  • Step 1 Place oats in food processor and pulse a few times.
  • Step 2 Add ingredients into food processor one at a time in the order listed above. Pulse a few times with each added ingredient. If the mixture is too dry, add extra nut butter or maple syrup.
  • Step 3 Scoop out batter and shape into balls giving them a light squeeze to stick the ingredients together. These measurements usually make 16 balls. Place on a parchment paper lined baking sheet and place in freezer for 10 minutes or refrigerator until formed or enjoy immediately! Store leftovers (if any) in an airtight container in refrigerator or freezer for 3-5 days. They keep better in the freezer!
