Healthy Eggless Oatmeal Banana Bread

I love this banana bread! Let’s get one thing perfectly clear … this isn’t omg yum lets have a slice of dreamy banana bread for dessert after a rich autumn meal. This is, however, a thick hearty banana bread that I am always in the mood for + I can toast + smother in peanut butter after my run in the morning.  You NEED this Healthy Eggless Oatmeal Banana Bread in your life.

Tara’s Tips for Perfect Oatmeal Banana Bread:

  • Bananas
    • try to use the most ripe, mushy bananas you have, they are naturally sweeter
  • Oats
    • use old fashioned rolled oats, not the steel cut kind or quick cooking instant oats, and always try to use organic oats when possible
  • Sugar
    • to keep this refined sugar free choose coconut palm sugar or turbinado sugar, alternatively you could use organic pure cane sugar or light brown sugar
  • Mixing
    • don’t over mix, your batter will become too sticky
  • Baking
    • use a standard loaf pan + make sure you grease it well
  • Serving ideas
    • slice, toast, spread your favorite nut butter or vegan spread, sprinkle with cinnamon, that is my favorite way! This is one of my favorite post-run snacks!
  • Leftovers?
    • place individual slices in a container or freezer bag, toast or microwave when ready to eat, this bread is perfect for meal prep.

Healthy Eggless Oatmeal Banana Bread

YUM! This is by far my favorite banana bread to toast in the morning with a big spoon of peanut butter on top! SO healthy!

Ingredients
  • 2 1/2 cups old fashioned rolled oats
  • 3/4 cups ground flaxseed
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups mashed ripe bananas
  • 1/4 cup sugar of choice (organic raw cane sugar, turbinado sugar, coconut palm sugar)
  • 1/4 water
  • 2 tsp vanilla extract
Directions
  • Step 1 Preheat oven to 350 degrees F
  • Step 2 Spray a 9×5 inch loaf pan with non-stick cooking spray or melted butter or coconut oil
  • Step 3 Place oats in a food processor or blender and grind until a fine flour is achieved
  • Step 4 Transfer the oat flour to the bowl of a stand mixer or a large mixing bowl, add in the flax, cinnamon, and salt. Once combined, slowly stir in the sugar, mashed bananas, water, vanilla, continue to mix until fully combined – do not over mix.
  • Step 5 Pour the batter into the greased loaf pan.  Bake in a 350 degree oven for 50 minutes. Your bread is done when a toothpick inserted in the center comes out with no liquid batter on it. Cook an additional 5-7 minutes as needed until the edges are perfectly golden brown. 
  • Step 6 Allow to cool for 15 minutes, slice, eat! Enjoy!
