Β This Pumpkin Quinoa Breakfast Bowl is easy enough to make on a busy weekday morning or for a brunch on the weekend.Β  We make a big batch of quinoa in the Instant Pot on the weekend and store it in jars to have ready to flavor it up for a healthy breakfast or lunch during the week. Making quinoa in the Instant Pot takes just a few minutes on the weekend + then you have many meal options during the busy week.

What Will You Need to Make this Pumpkin Quinoa Breakfast Bowl?

4 simple ingredients!

  • quinoa
  • plant-based or dairy milk
  • pumpkin puree
  • maple syrup

The easier the better is how I like it.Β  Mornings are busy enough.Β  Don’t let the difficulty of thinking of a healthy breakfast get in the way. Β Some additions that we like to use in our breakfast bowls are walnuts, almonds, bananas, cinnamon, pumpkin pie spice, chocolate chips, coconut shavings, or raisins.

Pumpkin Quinoa Breakfast Bowl

Swap out your oatmeal for some cooked quinoa, add in some pumpkin, sweeten with maple syrup, spice with some cinnamon and what do you get? Absolutely wonderful, healthy, flavorful, protein-packed breakfast quinoa bowl!

Ingredients
  • 1/2 cup cooked quinoa
  • 1/2 cup plant-based or dairy milk
  • 1 tsp ground cinnamon
  • 1/4 cup pumpkin puree
  • 1 tbsp maple syrup or other sweetener of choice
  • optional toppings: walnuts, raisins, bananas, chocolate chips, coconut shreds
Directions
  • Step 1 Combine cooked quinoa, milk of choice, and maple syrup in a small pot. Cook over medium heat for 3 minutes stirring constantly until combined and heated through. Remove from heat.
  • Step 2 Top with cinnamon and additional toppings as desired.
  • Step 3 Serve or eat or transfer to a jar for breakfast on the go! Double the recipe to share or make ahead.
