Gluten Free Breadcrumb Pasta

Gluten free pasta tossed with breadcrumbs and topped with roasted veggies for the perfect plant-based + gluten-free lunch or dinner!

Ingredients
  • gluten free pasta (one box) cooked according to package directions
  • 1 1/2 cups panko breadcrumbs
  • 1 tbsp plive oil
  • 1/2 tsp salt + black pepper
  • 1 tsp onion + garlic granules or powder
  • Optional roasted veggies for topping
Directions
  • Step 1 While pasta is cooking, heat 1/2 tbsp oil in a medium non-stick or cast iron pan over medium-high heat, once hot add breadcrumbs, salt, pepper, garlic, and onion powders. Cook the mixture, stirring frequently, until breadcrumbs are toasted and slightly brown, then remove from pan and set aside.
  • Step 2 When pasta is done cooking, drain but reserve the cooking water.
  • Step 3 Heat the other 1/2 tbsp oil over medium-high heat in same pan used to toast the breadcrumbs. Add pasta and stir. Then add one cup of the reserved cooking water and stir again. Slowly sprinkle in toasted breadcrumbs while continuously stirring. Pasta should be evenly coated with breadcrumbs.
  • Step 4 Top with roasted vegetables of your choice (I chose asparagus with roasted garlic). Eat or serve immediately. Enjoy!
