I love salad! I have a loved salad for a long time.  However, my salads used to look a little different.  They were a total fat + calorie trap.  Loaded with cheese, nuts, and calorie-dense dressings.  Don’t get me wrong, my salads were always scrumptious then and they still are now.  As a whole food, plant-based eater, some might question if my salad could still taste scrumptious.  The answer is yes and yes and yes!!!! How, you ask? First, thanks to recipe creations like this Dairy Free Green Goddess Dressing. Second, I figured out how to use silken tofu as the base to my dressings.  Changed my life 🤣.

Traditional green goddess dressing recipes call for sour cream, mayonnaise, or buttermilk.  Don’t even get me started on the ginormous list of ingredients on the bottled version. Wow, why do they do that?!?! Now you can make your own and #eatrealfood. As we journey through eating WFPB, I have really tried to cut out unnecessary saturated fats.  Although one could argue that nuts and olive oil are healthy, we prefer to eat whole olives and whole nuts with the fiber intact optimizing the nutritional value of these foods.  Above all, this dressing gives us the added protein punch with the silken tofu! Woo-hoo!

Tara’s Tips For Perfect Dairy Free Green Goddess Dressing:

  • Use silken tofu.  No swaps here.  The texture/consistency/taste will not be right if you use any other kind.
  • If you have it, use fresh parsley, you will not be sorry!
  • Don’t leave out the mustard! It is a total game changer here.  The absolute secret to getting the right taste on this one.
  • The jalapeno gives it a kick.  If you are spice-sensitive, remove the seeds of your jalapeno or leave it out entirely. I use a whole jalapeno, start with 1/4 at first.  You can always add but you can’t take away.
  •   This dressing gets thick as it sits, you might need to dilute it a touch with water when ready to use but don’t overdo the water because you will change the flavor profile.  What I do is when I am prepping dinner, I toss everything into my blender but don’t blend it.  I put the covered blender canister in the refrigerator until we are ready to eat.  When we are ready, I blend the dressing, transfer to a mason jar and pour!

Green Goddess dressing of your dreams! No oil, no nuts, no dairy! Silken tofu is the key! 6 ingredients + 5 minutes!

Ingredients
  • One 16-ounce package organic silken tofu
  • 1/4 cup fresh parsley
  • 1 tbsp lime juice
  • 2 tsp salt
  • 1 tbsp mustard
  • jalapeno to taste (use 1/4 of a jalapeno for a small amount of spice up to the entire jalapeno, option to remove seeds to decrease the jalapeno flavor/heat as well, start with 1/4 and add more to your liking)
  • 1 tbsp apple cider vinegar
  • 1/4 cup water
Directions
  • Step 1 Place all ingredients in a blender and blend until all ingredients combined. Add additional 2 tbsp of water as needed to achieve the consistency of sour cream.
