Looking for a healthy + easy + vegetarian side dish? You have come to the right place. Today, I introduce you to one of my go-to salads. The perfectly yummy Avocado Salad! A few simple ingredients, one bowl, and 7 minutes, that is all you need. Let’s go!

Tara’s Tips for a Avocado Perfect Salad

  • Buy the avocados soft OR plan ahead to make your avocado salad after they have softened.
  • To speed up the avocado softening process, place them in a brown paper bag
  • How do you choose the best avocado? A perfectly ripe avocado for this avocado salad is purple-brown in color and gives a little when you press it.
  • Use fresh cilantro if you have it available.
  • Taste and squeeze the lemon and lime juice and the salt until you achieve your perfect blend of sour and salty.
  • I prefer to use cherry tomatoes for this salad, but plum tomatoes will also do.
  • If you have leftovers, put leftovers in an airtight glass container with the avocado pit and an extra teaspoon of lemon juice.Β  This will prevent the avocado from browning.

Avocado Salad

Avocado salad is a healthy side dish, snack, or lunch box idea. Lots of healthy fats and vitamins. Vegan, gluten free, ready in minutes in one bowl!

Ingredients
  • 1 chopped avocado
  • 1 cup chopped tomato
  • 1/2 cup chopped red onion
  • 1 jalapeno diced small and seeds removed
  • lemon + lime juice: 1/2 tbsp of each
  • 1 tbsp finely minced cilantro leaves
  • salt to taste
  • splash of white or apple cider vinegar
Directions
  • Step 1 Combine all ingredients in a bowl and gently stir to combine. Serve salad on its own or alongside your favorite dish. Store leftovers in an airtight container with an additional 1 tsp lemon juice and the avocado pit in the container to prevent avocado from browning.
