Easy Lentil Veggie Burger (Eggless!)

This super flavorful Easy Lentil Veggie Burger is vegan + gluten free + ready in under 30 minutes! No breadcrumbs, no eggs, no flour, no fuss! Lentils + oats + onions + a few spices tossed in a food processor + there you have it, a burger! Healthy + easy + full of wholesome, healthy, plant-based ingredients.

Tara’s Tips for Perfect Easy Lentil Veggie Burgers:

  • Lentils
    • Use one can or 1 1/2 cups cooked lentils.  Green or brown or red lentils, you choose! If you are starting with dry beans, place them in a saucepan + add water to cover them plus 2 inches, simmer for 15 minutes of until soft.
  • Oats
    • Old fashioned rolled oats are the only oats that work here.  Not steel cut, not quick cook.  As with all oats, use organic if possible. If you are keeping this gluten free, make sure your package specifically states gluten free, not all oats are.
  • Leftovers
    • First of all, I always make a double batch of these.  Second, I cook them. Third, I freeze them (after cooking) in individual containers.  Finally, I heat them up one at a time for lunch or a few at a time for family dinner.  Simply defrost the burger, then toss them in a non-stick skillet and brown them on both sides for a few minutes. Easy + healthy! No fuss!
  • Spice
    • I included in the recipe using chili paste + turmeric + nutritional yeast. The chili paste increases the heat.  If you are sensitive to spice, use less.  I use 2 tablespoons.  Use more or less depending on how spicy you like your burger!
  • Processing
    • Don’t over-process! Your patties will be mushy!!! Leave a little bit of texture so that they have a little more burger-like feel.

How To Serve These Amazing Lentil Veggie Burgers 

Whole wheat bun, white, gluten free, or even a lettuce bun.  Alternatively, you could cut this black bean burger up, put it over a salad, and dress it with Chili Lime Tahini Dressing, Dairy Free Green Goddess DressingLemon Tahini Salad DressingSilken Tofu Vegan Spicy Ranch or Creamy Vegan Avocado Dressing. Pair these guys with Mango Salsa, Sweet Potato Crinkle Fries or Air Fryer Green Beans.

Easy Lentil Veggie Burgers (Eggless!)

These Lentil Veggie Burgers are tasty + healthy. They come together in 20 minutes + can be served on a bun or atop a salad!

Ingredients
  • Lentil Burgers
  • 5 burgers
  • 1 ½ cups cooked lentils (or 1 can)
  • 1 cup old fashioned rolled oats
  • 2 tsp turmeric
  • 1-2 tbsp chili garlic paste (more for increased spice level)
  • 2 cups onion (coarsely chopped)
  • 1 tbsp nutritional yeast
  • 1 tsp salt
  • Burger buns, lettuce, tomato, red onions, spicy ranch or mayo as desired for serving. See body of post for vegan homemade spicy ranch.
Directions
  • Step 1 Combine all ingredients in a food processor.
  • Step 2 Process ingredients until chopped and slightly smooth. Do not over-process.
  • Step 3 If you have time, place burger batter into the refrigerator for 30 minutes as it helps to set the batter. Can be pre-made and refrigerated for up to several hours or overnight.
  • Step 4 If not, proceed to divide batter into ½ cup portions and shape into burger patties. They will be wet/mushy, that is expected.
  • Step 5 When ready to cook your patties. Heat a non-stick skillet over medium heat. Spray the skillet with olive oil or avocado oil spray (or drizzle bottom of skillet with oil of choice) Once heated, cook burgers for 7 minutes, flip, and cook another 7 minutes or until golden brown. As burgers cook, you will want to move them around in the pan to be sure they cook evenly.
  • Step 6 These burgers can be made ahead of time and used for meal prep. Cook them in the pan first and store in separate containers or baggies in the freezer. Reheat in a skillet when ready to eat.
  • Step 7 Serve on buns with lettuce tomatoes, your favorite sauce, or over a salad.
  • Step 8 Enjoy!
