In the My Vegetarian Family kitchen, zucchini and squash are not just for summer time! We are fortunate enough to have access to these wonderful vegetables year round here in Florida.  We picked these up from our local farmers market and I tossed them in the air fryer.  They turned out so beautiful and delicious, I just had to share this recipe right away!

If you know me, you know I love my air fryer.  As hubby and I continue on our journey with purely plant-based eating, the air fryer has been a real life-saver.  I can toss (just about) anything in there and have a healthy + filling snack or side dish in minutes.

Tara’s Tips For Perfect Air Fryer Zucchini and Onions:

  • Whenever possible, I do not use oil.  However, with this recipe, I do use a light spray of olive oil.  A little goes a long way and it doesn’t need much at all. Don’t use too much! So many people tell me that they get soggy zucchini when they air fry it, you are using too much oil! You don’t need the calories or the sogginess!
  • Choose your zucchini: I used green zucchini + yellow squash.  They are about the same size + texture making it easier to cook them evenly.
  • Clean + dry your zucchini before applying any spices.  Make sure they are dry first!
  • Eat them fresh + hot.  These are best when they are fresh out of the air fryer.  If you need to reheat them later, toss them back in the air fryer for 2-3 minutes. The microwave will make them too soggy.
  • Don’t like onion powder? Substitute garlic powder, dried Italian herbs, or smoked paprika.  All are awesome.
  • Don’t cut the zucchini or onions too small.  That is also how they get soggy!
  • You could also use these as a pizza or pasta topping or mix them with quinoa.
  • They don’t need any extra flavor and can be enjoyed on their own.  However, if you like to add a little spice (like me 😊), drizzle some Sriracha or hot sauce over the top.  You also could dip them!  The most perfect dip options for these are: Vegan Chipotle Mayo or Easy Vegan Ranch. They also pair well with Vegan Creamy Italian Dressing or Dairy Free Green Goddess Dressing.

Air Fryer Zucchini and Onions

This recipe for healthy, low-carb, vegan, gluten-free Air Fryer Zucchini and Onions makes the perfect side dish or snack! Ready in 20 minutes with just a light spray of olive oil!

Ingredients
  • 4 green zucchini and/or yellow squash
  • 1 white or yellow onion
  • 1 tsp onion powder or granules
  • 1/2 tsp salt + pepper
Directions
  • Step 1 Preheat air fryer to 350 degrees F.
  • Step 2 Clean and dry the zucchini. Cut the stems off. Slice lengthwise and then into 1/2 inch slices (half moon shapes)
  • Step 3 Slice the onion.
  • Step 4 Place zucchini and onions into a bowl, lightly spray with olive oil spray + sprinkle with onion powder, salt + pepper, stir until fully coated.
  • Step 5 Transfer zucchini and onions to air fryer basket. Air fry for 14 minutes or until the onions and the edges of the zucchini are lightly browned. Shake the basket half way through cooking. During the last 2 minutes, check to make sure you are not burning them!
  • Step 6 Serve with your favorite dip or on top of pizza, pasta, or quinoa. Eat immediately. Reheat leftovers in air fryer for 2-3 minutes. Enjoy!
