Tara’s Tips for Perfect Oil-Free Green Olive Hummus:
- Chickpeas:
- 1 can (drained and rinsed)
- Or you can start with dry beans: place one cup of beans + 3 cups of water in instant pot, press manual and adjust timer to 60 minutes, allow pressure to release naturally, drain and cool.
- One and a half cups of cooked garbanzo beans = 1 can.
- How To Make Hummus Oil-Free:
- The SECRET ingredient in making perfect oil-free hummus? ICE WATER! Yep, you heard me correctly. Ice water. Works every time to create perfect consistency and you do not need the oil.
- Tahini:
- Make sure your tahini only has one ingredient: sesame seeds! You don’t need anything else in there!!!! Check your labels!
- Olives:
- Any green olive you love can be used here. Preferably, you should use plain, pitted green olives with no pimento in the center.
- Serving Ideas:
- With your favorite veggies, crackers, pita bread, in a wrap, on a sandwich, on a salad.
- Leftovers:
- Store in a glass, airtight container for up to 7 days. This does not freeze well because it does not defrost with a good consistency.

Oil-Free Green Olive Hummus Recipe
You will NEVER want to buy store-bought hummus again after you try this easy + yummy + oil-free homemade Green Olive Hummus recipe! Plant-Based Snack Perfection! YUM!
Ingredients
- 1 can of chickpeas or 1 ½ cups cooked chickpeas (rinsed + drained)
- ¼ cup tahini (be sure your tahini has only one ingredient: sesame seeds!)
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1 cup pitted green olives (drained) plus more for topping
- 1/4 cup brine from olive jar
- 3 garlic cloves
- 1 cup ice
Directions
- Step 1 Combine all ingredients except ice water and olives in a blender or food processor.
- Step 2 Pulse a few times to initially combine the ingredients.
- Step 3 Pause your blender or food processor, open + scrape down the sides.
- Step 4 Add ice and brine and blend until smooth.
- Step 5 Add olives and blend again until fully combined, add additional brine 1 tbsp at a time until desired consistency is achieved being careful not to add too much.
- Step 6 Top with additional olives to taste.
- Step 7 Eat or serve immediately or store in an airtight glass container for up to 7 days.
