This recipe for Dill Pickle Hummus is smooth, creamy, tangy, perfectly full of garlic, and just savory enough to make it the perfect dip or spread.Β  Β If you know me, you know I love a good copycat recipe.Β  I especially love, after multiple taste-tests, when I nail it! Even better, is when someone in the MVF family tells me that my copycat version is even better than the original. Yaaaaaaas πŸ™ŒπŸ».Β  No testing necessary for you to rock this Copycat Trader Joe’s Dill Pickle Hummus.Β  Trust me here, don’t be dill-y 🀣.

Tara’s Tips for Perfect Dill Pickle Hummus:

  • Options for your chickpeas: use one can (drained and rinsed) or you can start with dry beans.
  • If starting with dry garbanzo beans: place one cup of beans + 3 cups of water in instant pot, press manual and adjust timer to 40 minutes, allow pressure to release naturally, drain and cool.
  • One and a half cups of cooked garbanzo beans = 1 can.
  • The SECRET ingredient in making perfect hummus? ICE WATER! Yep, you heard me correctly.Β  Ice water.Β  Works every time to create perfect consistency and you do not need the oil.
  • Make sure your tahini only has one ingredient: sesame seeds! You don’t need anything else in there!!!! Making oil-free hummus out of ingredients with added oils does not make sense …. check your labels!
  • Let’s talk about the pickles.Β  Dill pickles.Β  If you are going for copycat Trader Joe’s, don’t use a different pickle.Β  If you are just looking for tangy pickle hummus, choose whatever pickle you love.
  • Use fresh dill! None of that dried out stuff.Β  It seriously tastes different and you will be sorry.
  • Serving suggestions: as a dip with crackers, pita bread cut into triangles, pita chips, pretzels, or cut fresh veggies.Β  Alternatively, you could spread this into your favorite sandwich, wrap, veggie burger, or onto a toasted slice of rye or sourdough bread, yum!
  • Store leftovers in a glass, airtight container for up to 7 days.Β  This does not freeze well because it does not defrost with a good consistency.

Copycat Trader Joe's Dill Pickle Hummus

You will NEVER want to buy store-bought hummus again after you try this easy + yummy + oil-free homemade Dill Pickle Hummus recipe! Plant-Based Snack Perfection!

Ingredients
  • 1 can of chickpeas or 1 Β½ cups cooked chickpeas (rinsed + drained)
  • 1/2 cup chopped dill pickles
  • ΒΌ cup tahini (be sure your tahini has only one ingredient: sesame seeds!)
  • 1 tbsp lemon juice
  • 1/2 tsp salt + black pepper
  • 4 garlic cloves
  • 2 tbsp dill pickle juice (from the jar of dill pickles)
  • 1/2 cup ice
  • 1 tbsp chopped fresh dill
Directions
  • Step 1 Combine chickpeas, 1/4 cup of the dill pickles, tahini, lemon juice, garlic, salt + pepper in a blender or food processor.
  • Step 2 Pulse a few times to initially combine the ingredients.
  • Step 3 Pause your blender or food processor, open + scrape down the sides.
  • Step 4 Add ice + dill pickle juice. Blend until smooth. If your hummus is too thick, add 1 tbsp water at this time and blend again.
  • Step 5 Pour hummus into a bowl + add the remaining chopped dill pickles, and 1/2 of the chopped dill, and stir.
  • Step 6 Top with the additional dill+ more black pepper to taste.
  • Step 7 Eat or serve immediately or store in an airtight glass container for up to 7 days.
