Air Fryer Peanut Sauce Tofu

This dish is made awesome with the creamy, peanutty sauce that is super easy, vegan, and ready in a few minutes. A versatile sauce that can be added to your favorite vegetables, quinoa, noodles or rice!

Ingredients
  • 14 ounce container organic extra firm tofu
  • 1/2 cup creamy peanut butter
  • 1 tbsp garlic paste or minced garlic
  • 1 tsp finely grated fresh ginger or ginger paste
  • 3 tbsp coconut aminos
  • 2 tbsp rice vinegar
  • 1/4 cup water
  • 1/4-1/2 tsp ground red pepper or chili powder (to taste)
  • optional toppings: scallions, chopped peanuts, additional red pepper flakes.
Directions
  • Step 1 Combine peanut butter, garlic, ginger, coconut aminos, rice vinegar, and water in a mason jar. Shake until ingredients are fully combined. Set aside.
  • Step 2 Drain water from tofu packaging, no need to press. Cut tofu into 1 inch cubes.
  • Step 3 Place the tofu in the air fryer in a single layer. Air Fry at 390 degrees for 10 minutes, flipping each tofu cube over after 5 minutes of cooking. This will need to be done in batches as the tofu needs to be in a single layer in the air fryer.
  • Step 4 While your tofu cooks, add the remaining ingredients to a skillet or pot, simmer over medium-low heat for 5 minutes, stirring frequntly.
  • Step 5 Once tofu is golden brown, carefully remove from air fryer and add to pot with the peanut sauce.  Simmer over low heat for 2-3 minutes gently stirring ensuring all tofu cubes are coated.  Add a few additional tablespoons of water if you find the sauce is too thick.
  • Step 6 Transfer to serving dish with your choice of steamed vegetables, noodles, rice, quinoa, or simply eat as is! Top with sesame seeds, scallions, red pepper flakes, and peanuts to taste. Enjoy!
