Meet my latest creation: the most prefect, spicy, creamy, egg free mayo. Put it in a wrap, on a veggie burger, dunk your veggies or fries in it, or simply eat it with a spoon. Yes, this Vegan Chipotle Mayo is that good π.
No Eggs! Hooray! I don’t eat eggs so I am always trying to recreate staple items that typically require eggs and make them egg free. This one came about as the perfect complement to my Air Fryer Zucchini Fries. Some things are just not the same without a little spicy mayo.
Tara’s Tips for Perfect Vegan Chipotle Mayo
- Soak the cashews! The soaking is the key to getting them super creamy.
- Use whole raw cashews. Not the ones that are roasted or salted or spiced in any way. Plain old cashews that have had nothing done to them.
- CAUTION! Chipotle peppers are spicy. If you want just a little spice cut back the peppers to one or two instead of the three that I used.Β
- Add a pinch of smoked paprika if you like ‘smoked’ flavor. If not, leave it out. Totally optional.
- Use a high speed blender for best results. If you don’t have one, you will need to blend this in increments. Blend for 30 seconds, stop the blender, scrape down the sides, add water if needed to ease the blending process, repeat until smooth consistency is achieved.
What can you do with your Vegan Chipotle Mayo?
Perfect for dipping zucchini fries, air fried green beans, orΒ sweet potato fries. This mayo is also yummy on Spicy Paneer Wraps,Β Jackfruit Mexican Lettuce Wraps π. Place any leftovers in a glass jar and store in the refrigerator for up to 7 days.
Vegan Chipotle Mayo
No egg spicy mayo?!?!?! Yes please! Perfect for dipping veggies, spreading on wraps, veggie burgers, or sandwiches. Creamy + spicy + super easy to make!
Ingredients
- 1 cup raw unsalted cashews
- 3 chipotle peppers in adobo sauce
- 1 tbsp fresh squeezed lemon juice
- 1/2 tsp salt
- 1/4 cup water
Directions
- Step 1 Place cashews in a bowl, cover with boiling water, soak for 30 minutes. After soaking, drain water and transfer soaked cashews to a high speed blender.
- Step 2 Add the salt, chipotle peppers with their sauce, lemon juice and water to the blender. Blend on high speed until smooth. Add more water as needed to achieve a creamy consistency.
