Tempeh is a great source of protein + calcium + iron + magnesium! Above all, it is very high in prebiotics.Β  If you are not familiar with prebiotics, time to get familiar!!!!! Prebiotics are a type of fiber that promote the growth of good gut bacteria. YES! To simplify this, we need lots and lots of good gut bacteria for our overall heath, to reduce inflammation, and so many more reasons!Β  One way we get these is by eating a large variety of plants.Β  Another way we accomplish this is by eating fermented foods.Β  Tempeh is a fermented food πŸ™ŒπŸ». Tempeh is on regular rotation in the MVF kitchen as one of our main sources of clean, plant-based protein.

Tara’s Tips for Perfect Tempeh Sloppy Joes:

  • Boil the tempeh first!!!!! One of the main reasons people think they do not like tempeh is because it has a slightly bitter taste.Β  Personally, I do not like tempeh in its original form, I always boil it. After boiling, the bitter taste is gone.
  • Meal Prep Sloppy Joes: Make a double batch and freeze or refrigerate the leftovers in single serving glass containers for lunch boxes or busy weeknights. Simply heat up and spoon onto a bun when ready to eat!
  • Don’t have liquid aminos? Use soy sauce!
  • No coconut palm sugar? Sub brown sugar or cane sugar.
  • The red pepper powder (chili pepper powder) determines the spice level.Β  If you are sensitive to spice, leave this out.Β  If you like it spicy, add more.Β  Taste and adjust spice level at the end of cooking.

These meatless tempeh sloppy joes make a perfect + filling lunch or dinner. Easy + nutritious + made with real simple ingredients.

Ingredients
  • 16 ounces organic tempeh
  • 2 cups diced onion
  • 2 tsp salt
  • 5 cloves garlic
  • 3 tbsp tomato paste
  • 1 cup water
  • 1/2 tsp red chili pepper powder
  • 2 tbsp mustard
  • 1 tbsp liquid aminos (sub soy sauce)
  • 1/2 tsp black pepper
  • 2 tsp coconut palm sugar
  • 6 rolls or buns, shredded lettuce or cabbage for serving
Directions
  • Step 1 Bring 3 cups water to a boil in a medium pot.
  • Step 2 Break tempeh block up into small crumbles with your hands.
  • Step 3 Add tempeh to boiling water and boil for 10 minutes.
  • Step 4 After 10 minutes, pour into a colander and fully drain water from tempeh, set aside.
  • Step 5 Heat diced onions in a non-stick skillet over medium heat. Sprinkle onions with 2 tsp salt to prevent burning, sautΓ© for 5 minutes. Add water a tablespoon at a time if your onions stick to the skillet.
  • Step 6 Add and garlic, reduce heat to medium, cook another 2 minutes. Stir frequently.
  • Step 7 Stir in tomato paste, water, tempeh, and all remaining ingredients, cover and cook 5 minutes, stirring intermittently.
  • Step 8 Taste and adjust salt and spice level adding in more red pepper for additional spice or more salt for saltier flavor. Serve on buns or rolls with shredded lettuce or cabbage.Enjoy!
