Have you ever tasted ‘light’ ranch.Β I have no words.Β Maybe I do have words.Β For me, there is just something missing when ranch tries to be ‘light’. It tastes awfully artificial and perhaps not as ranch-ish? You get me, I know you do. The problem is, when it comes to ranch, light is a good thing. I used to love ranch dressing.Β Portion control and ranch did not go together for me.Β So, with light ranch missing the mark, I ate the real thing. Too much of it, admittedly.
For a 2 tablespoon serving of bottled ranch dressing you are taking in a whopping 10 grams of fat with vegetable oil being the second ingredient on the label. Not sure about you, but I need a lot more than 2 tablespoons of ranch on my salad. So, 20 or even 30 grams of fat on a salad?!?!? Not. Any. More. π€
Tofu In Salad Dressing? YES!
Not sure about adding tofu into salad dressings! Why not?!?! Using tofu as the base for a creamy dressing gives you that creamy texture without the fat, oil, and calories.Β Above all, you get an extra protein punch with the protein-filled tofu! Still not sure? Silken Tofu Vegan Ranch (nut-free)
This Silken Tofu Vegan Ranch is creamy + perfect + SO healthy! It is oil-free and nut-free and packed with protein so get ready to drizzle it on your salad, layer it into a sandwich or use it as a dip.
Ingredients
- 16 ounces organic silken tofu
- 1 tbsp vinegar
- 1 tbsp lemon juice
- 2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1/2 tsp salt
- 3 tbsp fresh dill
Directions
- Step 1 Place all ingredients into a high speed blender (except dill). Donβt add the dill at first because you want to keep the dill somewhat intact and wonβt turn your ranch green. Blend until smooth. Add the dill and pulse 3 or 4 times. Taste for salt and add more salt for a saltier dressing.
- Step 2 Serve as a dip, layered into a sandwich or wrap, or on top of your favorite greens.
- Step 3 Store any leftovers in a glass jar in the refrigerator for up to 7 days.
- Step 4 For meal prep divide into single serving containers separate from salad or meal. Apply dressing when ready to eat.
