We have become so accustomed to pumpkin recipes being sweet that by the time Thanksgiving rolls around, we are all on a sugar roll that keeps rolling right into the New Year and then we try to undo what we have done! You know what I am talking about!!! How about this year, we get our pumpkin fix with a fabulous savory pumpkin recipe! Count me in on this one.
These Pumpkin Veggie Burgers have quickly become a dinner favorite here in the MVF house.Β Partially because of how easy they are to make but mostly because we can sneak some pumpkin in and still feel good about what we are eating!
Tara’s Tips for Perfect Pumpkin Veggie Burgers
- Cook your quinoa ahead of time.Β I make a double batch of quinoa on the weekends so that I have it ready to toss in different recipes during the week.Β It is so easy to make in your instant pot. Start here to learn how I do it: Basic Instant Pot Quinoa.
- Use rolled oats not steel cut or instant.
- Make sure your patties are done before removing from the oven!Β Check to make sure they are not mushy inside + leave them in with the oven turned off if they are still wet or mushy.
- Make it a double stack! One bun + 2 patties + loads of toppings π
- Topping ideas include lettuce, tomato, jalapeno peppers, red onion, ketchup, mustard, vegan mayo, or sriracha.Β Totally awesome topped withΒ Vegan Chipotle Mayo.
- Serve on hamburger buns, in pita bread, in your favorite wrap, on a salad, over a bed of greens or on top of quinoa.
- Leftovers? These store perfectly in the freezer or refrigerator.Β When you are ready to reheat them, they are awesome browned in a skillet or the microwave works fine too.

Pumpkin Veggie Burgers

Ingredients
- 1/2 cup pumpkin puree
- 2 cups diced onions
- 4 cloves garlic
- 1/2 cup cooked quinoa
- 1 cut rolled oats
- 1 can cannellini beans (sub garbanzo or other white beans)
- 2 tsp baking powder
- 1 tsp salt
- 1/2 tsp cumin powder
Directions
- Step 1 Preheat oven to 325 degrees F.
- Step 2 Combine all ingredients in a food processor or blender. Process or blend until fully combined.
- Step 3 Form into 8 evenly sized veggie burger patties.
- Step 4 Place the patties on a parchment paper or silicone lined baking sheet.
- Step 5 Bake in 325 degree oven for 40 minutes. Turn off oven and leave veggie burgers in the oven for an additional 10 minutes.
- Step 6 Carefully remove from oven.
- Step 7 Serve on hamburger buns, in pita bread, in your favorite wrap, on a salad, or over a bed of greens or additional quinoa.
- Step 8 Topping ideas include lettuce, tomato, jalapeno peppers, red onion, ketchup, mustard, vegan mayo, or sriracha.
- Step 9 Freeze or refrigerate any leftovers, reheat in microwave and crisp in a warmed skillet. Enjoy!
