A blondie is not quite a cookie but not quite a brownie. These blondies are simply awesome. Moist + chewy + full of flavor! I opted not to mix anything in them. You could totally go crazy with the mix-ins! Options include chocolate chips, walnuts, slivered almonds, crushed peanuts, or even crushed pretzels. I enjoy these without the mix-ins. However, I love to eat these other blondies: Eggless Almond Butter Blondies with lots and lots of chocolate chips.
Another idea is to eat these with icing on top! Everything gets better with icing on top, am I right? 🤣 The recipe for THE BEST vegan icing is included in this recipe for my Peanut Butter Blondies.

Healthy Vegan Chickpea Blondies
These high protein, guilt-free Healthy Vegan Chickpea Blondies are also gluten-free + SO easy to make!
Ingredients
- 1 can garbanzo beans (chickpeas) or 1 1/2 cups cooked chickpeas
- 1/2 cup nut butter
- 1 cup coconut palm sugar (sub brown sugar or turbinado sugar)
- 1 tbsp vanilla
- 1/3 cup oat flour
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
Directions
- Step 1 Preheat oven to 350 degrees F.
- Step 2 Spray 8×8 pan with oil spray or line with parchment paper.
- Step 3 Combine all ingredients in the bowl of stand mixer and mix on medium-low until fully combined. Option to mix by hand works too but make sure you work the batter until everything is fully mixed.
- Step 4 Transfer batter to prepared pan, spreading evenly, pressing down with back of a spoon as needed.
- Step 5 Bake in 350 degree oven for 18-20 minutes or until edges are golden brown. Don’t overbake!
- Step 6 Allow blondies to cool, cut into squares, enjoy!
- Step 7 Leftovers can be stored in an airtight glass container in the refrigerator for up to 7 days or in the freezer for up to one month.
