What are Sofritas?
Shredded tofu braised with chipotle chilie peppers made wildly popular when they hit the menu at Chipotle Mexican Grill. As I write this, we are in the midst of stay-home orders due to Coronavirus. I am slowly recreating all of our restaurant favorites that we can safely eat in the confines of the MVF kitchen. Needless to say, I’ve used up a lot of tofu in the last week as we have taste-tested multiple versions of sofritas 🤣. My current goal is to recreate everything on the Chipotle menu that does not contain meat. I’ve mastered the black beans and the corn salsa and even the guacamole. Stay tuned for the rest…
Tara’s Tips for Perfect Copycat Chipotle Sofritas Every Time:
- If possible, use organic tofu! Soybeans are just one of those things that are worth the extra money to go organic. Check out my guide here on what else you should be buying organic.
- Some like it hot! Chipotle peppers are spicy. Dial back the amount of peppers you use if you are sensitive to spice OR add in more if you really like to take up the heat 🌶. I routinely use 2 but use only one if you like. If you LOVE chipotle peppers (like me 😊) you MUST make my Chipotle Hummus or Vegan Chipotle Mayo – both winners!
- When you order sofritas off of the Chipotle menu, they are watery. If you want yours watery, add another 1/4 water in the last step.
- Shred your tofu. Simply pull it apart. No pressing! No cutting! Just shred + crumble! 🙌 Like mine:
- No need to fry tofu here! No oil used in the making of MVF Easy Tofu Sofritas. Bake it!
- Watch your tofu while baking. Don’t overcook! The tofu is done when the edges are just golden brown. Usually 30 minutes but ovens vary so watch closely during the last 5 minutes. Like mine:
What should you eat with your Tofu Sofritas?
- Instant Pot Black Beans
- Roasted Jalapeno Queso
- Corn Salsa
- Guacamole
- OR toss them into a salad and top with Avocado Dressing
Copycat Chipotle Sofritas Recipe
This recipe for Copycat Chipotle Sofritas tastes exactly like the original! Super easy to make at home! Vegan + Gluten Free + Nut Free + made without any added oil! Bake the tofu, blend up some spices + there you have it! Vegetarian or not, you are going to love this one!
Ingredients
- 1 package (14 ounce) firm or extra firm organic tofu
- 1 tsp salt
- 2 tsp onion powder
- 2 tsp garlic powder
- 1-2 chipotle peppers in adobo sauce + 2 tbsp adobo sauce from the same can
- 1 tbsp juice from a lemon
- 2 tbsp ketchup (I use a no added sugar ketchup (Primal Kitchen) – check your labesl!)
- ½ - 1 cup water
Directions
- Step 1 Drain the water from tofu package + squeeze out any excess water
- Step 2 Pull the tofu apart with your hands – do not cut with a knife – just tear into pieces
- Step 3 Place tofu crumbles on a silicone lined baking sheet. Sprinkle with salt, onion powder, and garlic powder. Bake in a 425 degree oven for 30 minutes. Stir your crumbles once after the first 15 minutes of cooking.
- Step 4 While the tofu bakes, place the remaining ingredients into a blender + blend until smooth.
- Step 5 Tofu is done baking when the edges are crispy golden brown, around 30 minutes of baking.
- Step 6 Transfer baked tofu to a medium size non-stick or cast-iron skillet. Add blender ingredients, gently stir to coat your tofu in the mixture. Cook over medium heat for 5 minutes, stirring intermittently to prevent sticking.
- Step 7 Serve with black beans, vegan queso, corn salsa, guacamole, rice, or your favorite tortilla. Enjoy!
