This Chipotle Tomatillo Salsa copycat is EXACTLY like the real thing! Chipotle Mexican Grill calls this one medium salsa, I call it packed with flavor + awesome! The roasted tomatillos combined with tomatoes + spices makes this one a total crowd pleaser!

Tara’s Tips for Recipe Perfection:

 

  • First, use medium size tomatillos, remove all the husks, and wash them while your oven preheats.
  • Second, when you are roasting, be sure you roast only until you see them perfectly browned + bubbly skin.
  • Thirdly, remove from oven + allow to cool a little bit before blending (most blenders don’t like super hot ingredients!)
  •  Above all, If you are sensitive to spice and desire a medium salsa on the milder side, remove the seeds from your jalapeno before blending.
  • A word of caution, this salsa thickens as it sits.  As a result, be prepared to add water before serving to achieve that authentic Chipotle Mexican Grill consistency.
  • Leftovers? Store in a glass jar in the refrigerator for up to 7 days.  You may need to add water when you use it as a leftover.
  • To sum up, you can serve this awesomeness with chips, layered in a burrito, drizzled over nachos.  Similarly, this salsa is perfect on a veggie burger or on top of Mexican Quinoa!

Chipotle Tomatillo Salsa Copycat (Medium Salsa!)

Perfectly Roasted Tomatillo Salsa. YUM! Chipotle Mexican Grill calls this one their medium salsa. I call it a perfect copycat recipe with amazing flavor + spice!

Ingredients
  • 20 tomatillos, husks removed + rinsed, cut in half
  • 1 plum tomato, cut in 4 pieces
  • 1 jalapeno, stem removed
  • ½ cup packed cilantro
  • 1 red onion, cut in 8 pieces
  • 2 tbsp lemon juice
  • 1 tsp cumin
  • 2 tbsp lime juice
  • 1 tsp oregano
  • 1 tsp salt
Directions
  • Step 1 Preheat oven to 525 degrees. Line a baking sheet with aluminum foil.
  • Step 2 Place tomatillos + tomatoes (cut side down) on the baking sheet. Bake 20 minutes or until you see the skin start to brown + bubble.
  • Step 3 Remove from oven, allow to cool for 5 minutes.
  • Step 4 Place the remaining ingredients in a food processor or blender. Once cooled, add your roasted tomatillos + tomatoes. Pulse or blend until smooth with slight texture. Check salt level, add additional salt to your taste. May need to add additional water as this salsa thickens up as it sits.
  • Step 5 Serve with chips, in a taco, drizzled over nachos, or wrapped in a burrito.
  • Step 6 Store in a glass jar in the refrigerator for up to 7 days.
  • Step 7 Enjoy!
