No Eggs? No Problem!
Here in the MVF kitchen, we don’t eat eggs so we don’t bake with eggs. But … we do love cookies! Once you get the hang of it, eggless baking is quite easy.

Some popular egg replacements for baking are: flax, chia, apple sauce, bananas, tapioca starch, or a store-bough egg replacer. In these cookies, a store bought egg replacement works great , or if you don’t have that, use flax! Just add 3 tbsp of water + 1 tbsp flax and let it thicken.
Tara’s Tips for Perfect Vegan Sugar Cookies:
- If you are not vegan, you can easily use a real egg and real butter.
- If you are looking for an easy, fool-proof substitute, these are the perfect eggless cookie for you! Make sure you make the egg replacer or flax mixture ahead so that it has time to form. Simply mix flax and water and you are all set!
- Make your vegan sugar cookie life easier … chill the dough! It saves time and mess with those cute little cut-outs.
- Let these cool down first on a cooling rack, then, decorate your cookies with icing.
- Don’t want decorations? Eat them with just a sprinkle of powdered sugar or drizzle with melted chocolate. They are equally as delicious both ways.

Vegan Sugar Cookies
One Bowl. 30 Minutes. Easy, quick, delicious. Perfect for cookie cutouts!
Ingredients
- 2 1/4 cups flour (all purpose white or substitute 1/2 whole wheat if desired)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tbsp ground flax + 3 tbsp water (substitute 1 egg if not vegan or packaged egg replacement)
- 3/4 cup vegan butter (or softened butter if not vegan)
- 2 tsp vanilla extract
Directions
- Step 1 Preheat oven to 350 degrees.
- Step 2 In a small bowl mix together the flax and water and set aside. If using egg replacement prepare according to package at this time.
- Step 3 Place flour, baking powder, salt, and sugar in a large mixing bowl and stir until fully combined.
- Step 4 Combine butter and vanilla in a separate bowl and stir until fully combined. Slowly stir in the egg or egg replacement or flax mixture.
- Step 5 Fold these wet ingredients into the dry and mix until this mixture forms a soft ball of dough. Add 1 tsp of water as necessary to achieve a soft dough consistency.
- Step 6 Place dough in refrigerator for at least 10 minutes.
- Step 7 Press chilled dough onto parchment paper lined baking sheet. Flatten with hands or place another piece of parchment paper on top and roll into a thin sheet of dough. Cut into desired shapes.
- Step 8 Place baking sheet in 350 degree oven for 10 minutes. Ovens vary so watch cookies! They are done when edges turn a very light golden brown.
- Step 9 Allow cookies to cool prior to decorating or icing. Place leftover cookies in airtight container until ready to eat. Enjoy!
