In the absence of eggs, baked goods can easily turn into a recipe failure.Β  Most recipes rely on the eggs to create fluff, moisture, and texture. Replacing an egg in a recipe does not need to complicated or stressful. Let’s figure this out together!

Why Bake Without Eggs?

  1. The great egg debate. Vegetarians that consume dairy but not eggs are Lacto-Vegetarians. This can be for a whole variety of reasons including concern for animal well-being, environmental concerns, health reasons, or religious reasons.   2. Egg Allergy. Lots of people have egg allergies, so avoiding eggs is a necessity for them. They deserve a good dessert too! Just because they can’t eat eggs doesn’t mean they cant eat cookies!

Why Bake With Eggs?

Eggs give baked goods that fluffy lift, bind the ingredients together, enhance the moisture level, and provide structure for your creation. So, when learning how to bake without eggs, we need to replace the egg with something that helps with those qualities.Β  Especially in bigger things like a cake.Β  In smaller baked goods like cookies or muffins or pancakes, it isn’t quite as noticeable. Therefore, tackling these smaller baked items without eggs is an easier task.

What Is The Purpose Of The Egg In My Recipe?

SO IMPORTANT! The first thing to figure out is what the egg’s purpose is in your particular recipe.Β  That way, you can successfully choose what eggless replacement will work best for your situation.

  • Moisture

    • Replacing the egg with a banana or yogurt will do. Silken tofu is another great option for this.
  • Binding The Other Ingredients Together

    • Go with flax or chia seeds + water
  • Fluff

    • Aquafaba is what you need or vinegar + baking soda.
  • Structure

    • Applesauce, thanks to the pectin, will hold everything together.
  • Convenience

    • Commercial egg substitutes are a fool-proof way to replace eggs in any recipe 1:1. You cannot go wrong with this option if you have it on hand.

10 Egg Alternatives For Eggless Baking

  1. Flax: 1 tbsp ground flax + 3 tbsp water = 1 egg. Try a flax egg substitute inΒ Vegan Pumpkin Mini Muffins.
  2. Chia Seeds: 1 tbsp chia seeds + 1/3 cup water = 1 egg (good for adding density and a nutty flavor).
  3. Bananas: Β½ mashed banana = 1 egg (adds sweetness, moisture and texture). Try it out in this Easy Blender Waffles Recipe.
  4. Applesauce: ΒΌ cup unsweetened applesauce = 1 egg (adds thick moisture but does not make your recipe fluffy).
  5. Commercial egg substitutes: Follow Your Heart Vegan Egg, Ener-G Egg Substitute, Bob’s Red Mill Egg Replacer.Β  Super convenient to keep in your refrigerator to have in a pinch.Β  Also gluten free options are available. Try it out in this Peanut Butter Banana Bread Recipe.
  6. Tofu: Perfect for binding the ingredients together. ΒΌ cup silken tofu = 1 egg.Β 
  7. Vinegar & Baking Soda: 1 tsp baking soda + 1 tbsp vinegar = 1 egg = FLUFFY!
  8. Yogurt: ΒΌ cup plain yogurt = 1 egg.
  9. Arrowroot Powder or Cornstarch: 1 tbsp arrowroot + 3 tbsp water = 1 egg. I use corstarch in my famousΒ Buckwheat Chocolate Chip Cookies.Β 
  10. Aquafaba: 3tbsp aquafaba = 1 egg. This is the liquid from canned chickpeas and is typically used to replace egg whites + fluff. Best recipe ever right here for aquafaba vegan meringue.
