Here at MVF, we eat Mexican food every chance we get. We have learned some very important lessons in our taco-loving years, and I am here to share them with you today!
Reasons To Cook Plant-Based Mexican Food

- Easy + quick to turn a few simple ingredients into a snack or a meal

- You can eat it for breakfast or lunch or dinner or snack
Essential Kitchen Staples For Plant-Based Cinco De Mayo Cooking
- Beans: pinto or black
- Produce: tomatoes, onions, peppers of all varieties, avocado, corn, cilantro, lemon, lime, garlic, lettuce
- Spices: cumin, smoked paprika, salt, oregano, taco seasoning powder
- Rice: white, brown, black, cauliflower, quinoa
- Nutritional Yeast
- Tortillas: corn, white, wheat, sprouted, almond flour, rice flour, cassava flour, chips (of course)
- Tofu, Tempeh
Tara’s Shopping Tips for a Plant-Based Cinco De Mayo Celebration
- Firstly, you can find lots of healthy options in the freezer section including cauliflower rice, fire-roasted corn, cooked quinoa or brown rice, tortillas
- Secondly, jarred salsas are available in lots of stores, make sure you look for one without added sugar.
- Thirdly, chips make the meal! Read your labels and look for chips made with pure corn or almond flour and avocado oil. You can also make your own by baking a tortilla + cutting into triangles.
- Fourth, canned beans work! Look for vegetarian beans in cans free of BPA.
- Most importantly, read your labels! Taco shells, chips, taco seasonings, and tortillas can have sneaky ingredients such as food dyes, oils, refined sugars and flours. There are healthy + inexpensive options!
