To Soak or Not To Soak Your Beans

I prefer to soak my black beans prior to cooking. BUT if you are short on time (or you forget πŸ˜‰), you can still make the easiest instant pot black beans.

Why do I prefer to soak my black beans? Pre-soaking your beans reduces the cook time, improves the texture of the beans, and makes them easier to digest! You don’t have to soak black beans at all if you are short on time!Β 

How to properly soak your black beans:

First, rinse the beans in a colander to remove any dirt or debris. Then place the beans in a large enough bowl to allow for expansion and cover with two inches of water. Let the beans soak for at least four hours in the covered bowl. Before transferring to your Instant Pot, drain your beans, and give them a quick rinse. If you only have 1-2 hours, soak your black beans in a covered bowl with hot/boiling temperature water enough to cover the beans plus two inches.

If you choose not to soak:

Simply rinse your beans prior to placing in the Instant Pot and set your cook time to 35 minutes instead of the 15 as indicated in the recipe.

What To Do With Your Black Beans After Cooking

This really is the easiest instant pot black beans recipe because once you pop open the cover of your instant pot, you could eat these flavorful beans with a spoon on their own and they are wonderful! The jar of salsa is totally the secret ingredient! If you want black bean soup, just add more water, apply toppings, and enjoy! You could also make a copycat Chipotle burrito bowl. Layer your black beans with brown rice, and top with Corn Salsa (best copycat recipe right here), Guacamole (the only recipe you will ever need right here).Β These beans can also be used in my Quinoa Mexican Stuffed Peppers Recipe! Β  or you could layer them in a salad and top with my AMAZING creamy avocado dressing!

Place them in single serve glass jars or airtight containers and freeze to reheat or use as meal prep!

Easiest Instant Pot Black Beans

The EASIEST recipe for Instant Pot Black Beans! No chopping veggies involved! Yummy + Vegan + Easy + Packed with plant-based protein. Soak or no-soak method included.

Ingredients
  • 16 oz Dry Organic Black Beans
  • 3 cups water
  • 1 tsp dried oregano
  • 1 tsp cumin powder
  • 2 cups salsa (homemade or store bought)
Directions
  • Step 1 Soak Beans: (see notes below if you prefer not to soak beans). Rinse dry beans, place entire 16 oz (1lb) beans in a large bowl and cover in HOT water. Soak for 4 hours. Drain + Rinse Beans.
  • Step 2 Place soaked/rinsed/drained beans in your Instant Pot.
  • Step 3 Add the remaining ingredients to Instant Pot.
  • Step 4 Place cover on instant pot and turn the valve to β€˜seal’.
  • Step 5 Follow manufacturer’s safety instructions for properly sealing your Instant Pot.
  • Step 6 Press β€˜manual’ and use the up and down arrows to adjust time to 15 minutes.
  • Step 7 When the 15 minute timer beeps, allow pressure to release on its own. Do not manually release the pressure. This typically takes 20 minutes.
  • Step 8 After 20 minutes, carefully remove lid and stir beans.
  • Step 9 If you like thick beans, use the back of a large spoon and mash a few of the beans against the side of the pot or simply serve beans as is.
  • Step 10 If there is excess water, you can drain if you prefer our keep a liquid consistency.
  • Step 11 Pair with brown rice, whole grain tortilla chips, burrito shells, guacamole, and corn salsa.
  • Step 12 Store leftovers in a glass container in the refrigerator for 7 day or in freezer for up to 3 months.
  • Step 13 *NOTES*
  • Step 14 No Soak Method: rinse dry beans, place in Instant Pot with the rest of the ingredients. Place lid on Instant Pot and set valve to β€˜seal’. Press β€˜manual’ and adjust up and down arrows to a time of 35 minutes. Allow pressure to release naturally (20-30 minutes).
