Easy Vegan Cuban Sandwich

Sometimes you just need a sandwich.  Grilled bread, sliced tomato, mustard spread on both sides of the bread, and maybe even a pickle.  Even plant-based eaters need a sandwich now and then.  That is what happened here in the MVF kitchen.  One afternoon, Mr. MVF wanted a sandwich.  Not any old sandwich.  A Cuban sandwich.  With Cuban bread, mustard, cheese, and yes, a pickle.  So, what else could a girl do? I set out to create The Easy Vegan Cuban Sandwich. Not sorry I did, by the way.

What Is A Cuban Sandwich?

Typically, a Cuban sandwich (or Cubano sandwich) has two different types of pork, two layers of cheese, pickles, and mustard. Being that we eat only plant-based foods, I substituted the pork and cheese with vegan deli slices, and plant-based cheese.

Something else that makes a Cuban sandwich a Cuban sandwich is the bread.  If you can find it, use a Cuban sandwich loaf for this.  If you can’t find it, you can use a French baguette or Italian loaf.

Despite the plant-based substitutions, keeping this authentic will hinge on the perfect grilling of the bread, cutting it on the diagonal, and layering your ingredients appropriately.  Bread, mustard, cheese, pickles, deli slices, and then cheese again. Grill your sandwich in a panini press or in a skillet on the stove-top.

Easy Vegan Cuban Sandwich

The delicious Easy Vegan Cuban Sandwich is layered with plant-based deli slices, vegan cheese, pickles, and mustard, then grilled to perfection. The ultimate plant-based sandwich recreation!

Ingredients
  • 2 pieces of Cuban sandwich bread cut into 6 inch pieces
  • 1 package (5.5 oz) plant-based deli slices (ham or bologna) I use Lightlife
  • 4 tbsp mustard
  • 4 slices plant-based cheese of choice (can use more cheese slices if you like)
  • 6 pickle slices
Directions
  • Step 1 Slice the bread lengthwise.
  • Step 2 Spread mustard liberally onto both sides of the bread.
  • Step 3 Layer the 1 cheese slice, half the deli meat, pickles, and 1 more slice of cheese (use more cheese slices to taste).
  • Step 4 Close the sandwich, place in a skillet over medium-high heat and grill both sides until golden brown, pressing down into the pan with the back of a spatula to compress while browning. Alternatively, press in a panini press over high heat until brown.
  • Step 5 Cut in half diagonally.
  • Step 6 Repeat for the other sandwich.
  • Step 7 Serve with your favorite sides, enjoy!
