Ingredients for Teriyaki Zoodles (serves 2):

  • 2 large zucchini (spiralized)
  • one yellow or white onion sliced very thin (I use a mandolin)
  • 2 tbsp coconut aminos (or soy sauce if you prefer)
  • 3 tbsp of your favorite Teriyaki Sauce (I use no sugar teriyaki)
  • Sesame seeds, crushed red pepper, scallions for topping

Cooking Instructions for Perfect Teriyaki Zoodles:

  1. If you plan ahead, spiralize your zoodles in the morning that you will use for lunch or dinner + place on a baking sheet in the refrigerator. This helps with excess water.
  2. Cook onions and coconut aminos over medium heat 5 minutes, or until soft (add water 1 tbsp at a time if your onions begin to stick).
  3. Add zucchini noodles, turn heat up to medium-high, cook for one minute, add teriyaki sauce + cook for an additional 4-5 minutes or until zucchini is tender and coated with teriyaki sauce.
  4. Remove from heat, stir in or top with scallions + sesame seeds to your liking.
  5. Serve topped with crushed red pepper to taste.
  6. Enjoy πŸ’š
