How Awesome Are Zoodles?!?!
Meet zucchini noodles aka zoodles. Yep, they were a thing about 10 years ago. They are still a thing if you are looking for an alternative to pasta. A perfect way to get in some extra veggies and they are super easy to make! With recipes like Teriyaki Zoodles you can be a total rock-star with dinner on the table in less than 20 minutes. Grab yourself a pack of already spiralized zucchini noodles and you just cut 10 minutes off of that! Healthy + homemade plant-based CAN be easy!

Ingredients for Teriyaki Zoodles (serves 2):
- 2 large zucchini (spiralized)
- one yellow or white onion sliced very thin (I use a mandolin)
- 2 tbsp coconut aminos (or soy sauce if you prefer)
- 3 tbsp of your favorite Teriyaki Sauce (I use no sugar teriyaki)
- Sesame seeds, crushed red pepper, scallions for topping
Cooking Instructions for Perfect Teriyaki Zoodles:
- If you plan ahead, spiralize your zoodles in the morning that you will use for lunch or dinner + place on a baking sheet in the refrigerator. This helps with excess water.
- Cook onions and coconut aminos over medium heat 5 minutes, or until soft (add water 1 tbsp at a time if your onions begin to stick).
- Add zucchini noodles, turn heat up to medium-high, cook for one minute, add teriyaki sauce + cook for an additional 4-5 minutes or until zucchini is tender and coated with teriyaki sauce.
- Remove from heat, stir in or top with scallions + sesame seeds to your liking.
- Serve topped with crushed red pepper to taste.

How to Make Perfect Zucchini Noodles
