Sweet Potato Black Bean Bowls

A few simple ingredients layered in a bowl, drizzled with some yummy dressing, and you have yourself an awesome + easy + healthy + plant-powered bowl of awesome! Roasted sweet potatoes + black beans + kale + oh so delicious creamy jalapeño cilantro dressing come together + make this one of my favorite bowls I ever put together. These Sweet Potato Black Bean Bowls are perfect for meal prep, weeknight dinners, or any time! Get ready for awesome, you guys are going to love this one!

Tara’s Tips For Perfect Sweet Potato Black Bean Bowls:

  • Black Beans

    • Use one can, drained + rinsed.  Alternatively, you could use 1 1/2 cups of cooked black beans.
    • To boost the flavor of this bowl, you could use these beans: The Easiest Instant Pot Black Beans.
  • Sweet Potatoes

    • I chose to mix up the colors of my sweet potatoes for this one.  Any color will do.  Purple, white, or orange.
    • Air fry or oven bake? You choose! I like to air fry mine, 25 minutes at 375 degrees. If you choose to use the oven, roast them for 45-50 minutes at 350 degrees. Either way you roast them, they are not done until the edges are crispy golden brown.
  • Kale

    • When I make this bowl, I buy bag of organic chopped kale.  It is already washed + chopped + makes my life so much easier. You could start with kale leaves, cut out the stem + chop it yourself, whatever you like! You could also use fresh spinach which is equally as delicious here.
    • Simply put your cut up kale in a non-stick skillet, spray or drizzle with a little oil (omit if you don’t use oil and add 1-2 tbsp water), sprinkle on lemon juice, salt, pepper, and onion powder, cover and let it wilt, done!

Sweet Potato Black Bean Bowls

Roasted sweet potatoes + black beans + kale make a vegan + gluten-free + healthy dinner!

Ingredients
  • For the Sweet Potatoes
  • 2 sweet potatoes (cut into one inch cubes)
  • olive or avocado oil spray (optional)
  • 2 tsp smoked paprika
  • 1/4 - 1/2 tsp chili pepper powder (to taste)
  • 2 tsp cumin powder
  • 1 tsp salt + black pepper
  • 2 tsp garlic powder
  • 1 can black beans rinsed + drained (or 1 1/2 cups cooked black beans)
  • For the Kale
  • 4 cups sliced fresh kale
  • 1 tsp lemon juice
  • 1/4 tsp onion powder
  • 1/4 tsp salt +black pepper
  • For the Dressing
  • 14 ounce package silken tofu
  • 1/4 cup fresh cilantro leaves
  • 2 cloves garlic (peeled)
  • 1 jalapeno
  • 1tbsp lime juice
  • 1 tsp salt
  • Toppings
  • hot sauce, avocado, diced red onion, avocado
Directions
  • Step 1 Place the diced sweet potatoes into a bowl, spray with oil (optional), sprinkle with all the spices.
  • Step 2 Transfer to air fryer basket.Roast in air fryer for 25 minutes at 375 degrees. Shake the basket a few times during cooking. After 25 minutes, check that each sweet potato cube is golden brown on the edges. If not, cook for an additional 3-5 minutes or until golden brown.
  • Step 3 Carefully remove from air fryer, set aside.
  • Step 4 If you do not have an air fryer then roast the sweet potatoes on a silicone lined baking sheet in a 350 degree oven for 45-50 minutes or until the edges are golden brown.
  • Step 5 Heat black beans in microwave or on stove top until warm.
  • Step 6 Prepare the dressing by placing all dressing ingredients in blender or food processor, blend until smooth
  • Step 7 Next,put kale in a non-stick skillet, spray with oil, place the cover on the pan, let cook for 1 minute over medium heat, sprinkle in lemon juice, onion powder, salt, pepper, place the cover back on, cook over medium heat for 1 minute or until kale is wilted.
  • Step 8 Assemble bowls by layering the sweet potatoes, kale, beans, dressing, optional toppings, eat immediately. If preparing for meal prep, keep dressing separate until ready to eat. Enjoy!
