I love tomatoes. Any way you slice them, I love them. Raw, cooked, simmered into a marinara, sliced onto a pizza, diced into a salsa, I love them all. I especially love this recipe. Healthy and easy and creamy, this skinny tomato soup is the only tomato soup recipe you will ever need πŸ…!

 

 

 

 

 

Healthy Comfort Food

Who doesn’t love a good bowl of restaurant soup? I’m not sure who. We’ve all done it. It’s cold outside, you are hungry, it smells really good, so, you order the soup. For vegetarians, tomato soup is usually a safe one to order. Not too many ways they can sneak meat into tomato soup. However, there are many ways that calories, fat, sugar, and sodium can sneak into an otherwise healthy bowl of tomatoes! For example, a bowl of Panera Tomato Soup has 21g fat, 340 calories, 17 g sugar (!!!), and a whopping 840mg sodium 😲. Not my soup! Tomatoes + Onion + Spices + Yogurt + Milk. That’s it. Comfort food turned healthy. This skinny tomato soup is ready in under 30 minutes. Probably quicker than to make than it would take you to go through the Panera drive thru. Just sayin’.

Tara’s Tips for Perfect Skinny Tomato Soup:

  • Use San Marzano tomatoes. They come in a BPA free can or you can find them in most stores in a box or even a jar. They are a game changer. Use all 28 ounces of the tomatoes + the juices.
  • If you don’t have dried italian seasoning you can substitute dried thyme or basil.
  • Pairings are important here. Pair this awesome soup with something awesome: Chickpea Crackers, grilled cheese, shredded Parmesan cheese, Roasted Vegetable Pizza,Β Easy Vegan Cuban Sandwich,Β Air Fryer Tempeh Croutons, Β or Β Easy Homemade Croutons.
  • Vegan? No problem! Use any unsweetened non-dairy yogurt and milk such as almond or coconut milk. I’ve made this soup using dairy milk and almond milk. Both equally delicious!
  • Don’t blend hot soup in a blender. Be careful! It will pop the top off and squirt out the top. Either use a hand/immersion blender or wait for it to cool off.

Skinny Tomato Soup

This skinny tomato soup is quick + easy + healthy! Made without heavy cream but still super creamy! Ready in under 30 minutes!

Ingredients
  • 1 tsp extra virgin olive oil
  • 1 onion
  • 2 tsp salt
  • 3 cloves garlic
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 28 oz can San Marzano tomatoes with their juices
  • 2 cups water
  • 1/2 cup dairy or plant-based unsweetened plain milk
  • 1/4 cup plain greek or unsweetened coconut milk yogurt
  • finely chopped basil for topping
  • salt + pepper to taste
Directions
  • Step 1 Heat olive oil in a medium saucepan over medium-high heat, once hot add diced onion, sprinkle with salt to prevent burning and sticking. Cook for 4 minutes over medium-high heat, then add garlic. Cook an additional 2 minutes. Continue to stir to prevent burning or sticking, lower heat as necessary.
  • Step 2 Add tomato paste, sugar, Italian seasoning, stir. Then add tomatoes with their juices and the water. Stir until fully combined. Bring the mixture to a boil. Reduce heat and simmer for 20 minutes, stirring occasionally.
  • Step 3 After 20 minutes, remove pan from heat. Use a handheld blender to blend the soup. If you are using a food processor or blender, allow your soup to cool first prior to blending. Blend until smooth.
  • Step 4 Heat milk in a small saucepan or in microwave until warm. Whisk yogurt into the warm milk until combined and smooth. Stir into the blended soup. Mix well.
  • Step 5 Top with fresh basil, salt, pepper, crushed red pepper flakes, grated Parmesan cheese to taste. Serve alongside bread, crackers, or grilled cheese. Store any leftovers in an airtight glass container in refrigerator for 3 days or in freezer for up to 3 months.
