Happy October! Oh how I love October. Fall races, cooler weather, football season, and lucky for me October is my birthday month! Does it get any better?!?! Yes, it does. In the month of October I can cook with pumpkin almost every day 𧑠and I am so happy about it. I understand that some of you have declared that you downright hate all things pumpkin. Maybe it is the PSL craze, maybe you don’t like sweet cinnamon pumpkin everything everywhere including your soap? I get it. So this Tuesday, my tips are a collection of my pumpkin recipes that are not dessert. For those of you that love the little orange gourd as much as I do, and those of you that might be on the fence about it, let’s do this!

When most people think of pumpkin, they immediately think of pumpkin spiced coffee drinks, donuts, and orange colored cookies. Pumpkin is so much more! Fall’s favorite gourd deserves a chance on your autumn dinner menu, trust me! Give the gourd a chance, you won’t be sorry!!!
October is such a fun month for me. It is the month I tend to reflect on the last year as celebrate turning a year older. I look forward to seeing myself continue to grow + be challenged as a plant-powered athlete in my annual fall race. Pumpkin spice and everything nice really rings true to me. I eat all the pumpkin all the time + love every second of it. I hope autumn brings lots of things you love, especially the ability to enjoy good food in the company of good people.
