It is no wonder overnight oats are so popular. You put all of your favorite ingredients in a jar, go to bed, and wake up to a perfect, nutritious, healthy, delicious breakfast. Every fall, myvegetarianfamily.com gets in pumpkin mode. So why not add it to our overnight oats? These Pumpkin Chia Seed Overnight Oats are the perfect way to kick-start fall in full on pumpkin mode.
As pictured, I doubled the recipe to feed two hungry vegetarians. I used almond milk, and topped with walnuts and cinnamon. Any milk will work in this recipe. Organic whole or reduced fat milk, oat milk, almond milk, soy milk, or your favorite nut-milk.
Simply layer all of the ingredients in a jar + swirl around to make sure everything is combined. Place the jar in the refrigerator overnight. In the morning your pumpkin chia seed overnight oats should be thickened + ready to eat. Because of the chia seeds, this overnight oats recipe can get very thick, so simply add water or more milk until you get to your desired consistency. Top with walnuts, sliced almonds, shredded coconut, raisins, bananas, cinnamon, nutmeg, sliced bananas, pumpkin pie spice, or all of the above. Eat it right out of the jar for on the go or pour into a bowl.

Pumpkin Chia Seed Overnight Oats
Oats, Chia Seeds, Pumpkin, Almond Milk. Mix in a jar, leave in refrigerator overnight and in the morning you have a healthy vegan breakfast!
Ingredients
- 1/3 cup Organic Old-Fashioned Rolled Oats
- 1/3 pumpkin puree
- dairy free or dairy milk of your choosing: 1/3 cup
- 1 tsp chia seeds
- 1/2 tsp cinnamon
- 1 tsp maple syrup or other sweetener of choice (to taste)
Directions
- Step 1 Layer all ingredients in a jar, gently swirl to mix, place in refrigerator overnight or at least four hours. Top with your favorite toppings and enjoy!
