The white flour typically baked into banana bread is replaced with almond flour + coconut flour + oats. What makes it sweet? 3 Bananas (yes, I said 3!), and just 1/4 cup of coconut palm sugar or turbinado sugar (you could sub for brown sugar if you like!).Β If you don’t need GF, use whole wheat flour or white flour. I sprinkled a little extra sugar on top prior to baking just for a little sweet crunch (try it!).Β Snapped a photo prior to baking just so you could see how much this hearty bread rises (and how lovely the extra crumbly sugar looks on top!).

- slice and eat while still warm
- put in freezer in individual portions for busy mornings or snack time
- toast a slice (my favorite), top with more peanut butter, bananas, chocolate chips, maybe some berries or homemade jam
- dice and put in your breakfast bowl

Peanut Butter Banana Bread
Bananas + Peanut butter baked into a hearty + sweet loaf of delicious! This peanut butter banana bread is just sweet enough + packed with nutritious ingredients leaving you will all of the yum + none of the guilt!
Ingredients
- 3 ripe bananas
- 1 tbsp vanilla extract
- 1 cup unsweetened almond or soy milk (dairy if not vegan)
- 1/4 cup coconut palm or turbinado sugar plus more to sprinkle (sub brown sugar if you like)
- 1/2 cup peanut butter (room temperature or warmed in microwave if necessary to be sure it is runny)
- 2 tsp cinnamon
- 1 2/3 cup almond flour (can sub white or whole wheat flour if not GF)
- 1 cup old fashioned rolled oats
- 1/2 cup coconut flour (can sub white or whole wheat flour if not GF)
Directions
- Step 1 Prepare loaf pan by greasing or lining with parchment paper
- Step 2 Preheat oven to 350 degrees
- Step 3 Mash bananas with a fork + add in milk, vanilla, sugar + stir until fully combined.
- Step 4 Add in runny peanut butter and stir again.
- Step 5 Once combined, add the rest of the ingredients and continue to stir by hand or with a mixer on low until all ingredients are combined without any dry areas.
- Step 6 Pour batter into prepared pan and bake in 350 degree oven for 60 minutes or until golden brown on top and toothpick inserted into center comes out without a sticky residue.
- Step 7 Let cool completely prior to removing from pan or slicing.
- Step 8 Leftovers can be store in individual slices in the freezer or in refrigerator in an airtight container. Enjoy!
