This Oil-Free Balsamic Vinaigrette is just perfect! Quick + easy + healthy! Use it as a marinade, pour it on veggies, salads, or pasta. For vegans, vegetarians, and meat-eaters alike, salads can either be super healthy or super unhealthy! The dressing you choose can be a total calorie + fat trap! Not this time! This one is a winner!
Hands down, this is the most perfect vinaigrette. No oil + packed with flavor. Dressings don’t need oil! You heard me correctly. Take it from me, I have created (and taste-tested) many many vinaigrette recipes. Including my Oil-Free Pumpkin Vinaigrette Recipe, as well as my recipe for Oil-Free Vinaigrette (plant-based + nut-free!).

I also love healthy! Oil-free salad dressing is the best of both worlds. One tablespoon of olive oil packs a whopping 14g of fat and 120 calories. Not to mention the processing, pressing, and stripping that goes into making oil out of olives. No thanks. I will skip the 1 or 2 or 3 or even 4 tablespoons of oil that is typically goes into a balsamic vinaigrette recipe. You won’t miss the oil! In fact, you might thank me for showing you a way to have your salad and eat it too … while enjoying it.

Tara’s Tips for Perfect Oil-Free Balsamic Vinaigrette Every Time:
- Use a blender to mix this! It really helps to get all of the ingredients fully combined quickly and blends up the garlic so no chopping!
- Add water 1 tbsp at a time until you reach desired consistency at the end.
- Xantham Gum: so, I added a little thickener in this dressing. This is totally optional. If you enjoy a thinner dressing or don’t like using thickeners, don’t use it! You can also substitute Guar Gum if you have it on hand. Xantham gum is a soluble fiber and when used in salad dressings, soups, and sauces, it can help prevent the separation of ingredients. Without a thickener, sometimes salad dressings slide off the veggies and the family members of MVF are not fans of that. They like a tasty, hearty salad 🥗!
- This is an AMAZING dressing! You can easily make a vegan pasta salad out of this, drizzle it into a wrap or veggie burger, dunk your air fryer veggies in it (my favorite air fryer recipes right here 😋). This oil-free vinaigrette is also perfect for any combination of greens + veggies for a salad or divide it into single-serve containers for meal prep!

Oil-Free Balsamic Vinaigrette
This Oil-Free Balsamic Vinaigrette is super easy to make with just a few simple ingredients. Vegan + nut free + gluten free + perfect for meal prep!
Ingredients
- 3 tbsp balsamic vinegar
- 2 tsp brown mustard
- 1 tbsp coconut aminos (can sub liquid aminos or soy sauce)
- 2 cloves garlic
- 1/2 cup + 3 tbsp water
- 1/2 tsp xantham gum
- 1 1/2 tsp dried italian herbs
- 1/2 tsp salt to taste
- 1/4 tsp black pepper to taste
Directions
- Step 1 Combine all ingredients except Italian herbs in a blender and blend until fully combined.
- Step 2 Once blended, transfer to a glass jar, add in Italian herbs and black pepper to taste. Cover + shake well.
- Step 3 Adjust water as needed adding 1 tbsp at a time until desired consistency is reached.
- Step 4 Store in refrigerator for up to 7 days.
