Tara’s Tips For Perfect Black Bean Mango Salsa:
- Start with dry black beans or use a can! 1 1/2 cups cooked black beans = 1 can.
- Use fresh, ripe mango.Β Frozen will not work for this recipe! In addition, make sure your mango is ripe but not too ripe or you will not be able to chop it without it turning into a stringy mess.
- Want more fruit? Add strawberries or pineapple or even a kiwi! Yum!
- The spice level … I use one whole jalapeno in here BUT we like things spicy! If you are sensitive to spice, use only 1/4 of the jalapeno or take out the seeds.Β You can always taste test and add more.
- Fresh cilantro works best.Β Dried cilantro will not have enough flavor in this copycat recipe.Β It will also soak up too much water.Β Try using fresh cilantro if it is available to you.
- Serve this chilled! If you need to make this ahead of time, chop everything + add the lemon/lime juice when ready to serve.

Mango Black Bean Salsa Recipe
This sweet salsa is a fresh + colorful twist on traditional salsa. Perfect to pair with any of your favorite Mexican dishes or bring to a picnic!
Ingredients
- 1 1/2 cups cooked black beans or 1 can (drained + rinsed)
- 2 cups diced mango
- 3/4 cup diced red onion
- 1/4-1 finely chopped jalapeno (be careful! this determines the spice level. remove the seeds to take down the heat)
- 1/4 cup finely chopped cilantro
- 1 cup diced tomato
- 1 tsp salt
- 1/2 tbsp lemon + 1/2 tbsp lime juice
Directions
- Step 1 Combine all ingredients in a large bowl and gently stir to mix together.
- Step 2 Serve chilled with chips, on top of nachos, in a taco, or on its own as a snack!
- Step 3 Enjoy!
