How wonderful is it to be vegetarian and be able to eat a really good burger? Let me tell you β¦ it is wonderful. Sometimes a girl just needs a real hearty veggie burger. Not a wrap filled with just wilted lettuce and maybe a pickle. Nope, not the weirdo sandwich option they serve the vegetarians at all of the luncheons and banquets. I love chickpeas! If you know me, I am a total chickpea junkie! Look out at my house because I find a way to sneak chickpeas into lots of things.Β Not sorry I snuck a few into this recipe.Β These are awesome.
Tara’s Tips For Perfect Chickpea Veggie Burgers:
- Use rolled oats not steel cut or instant.
- Don’t over pulse the mixture in your food processor.Β Stop pulsing when everything is mixed.
- If you have time, put the mixture in the refrigerator for 30 minutes to set prior to shaping into patties.
- Make sure your burgers are done before removing from the oven!Β Check to make sure they are not mushy inside + leave them in with the oven turned off if they are still wet after the 40 minutes. Mine take 38 minutes.
- Make it a double stack! One bun + 2 patties + loads of toppings π
- Topping ideas include lettuce, tomato, jalapeno peppers, red onion, ketchup, mustard, vegan mayo, or sriracha.Β Totally awesome topped withΒ Vegan Chipotle Mayo.
- Serve on hamburger buns, in pita bread, in your favorite wrap, on a salad, over a bed of greens or on top of quinoa.
- Leftovers? These store perfectly in the freezer or refrigerator.Β When you are ready to reheat them, they are awesome browned in a skillet or the microwave works fine too.

Chickpea Veggie Burgers (vegan + gluten-free)
Turn a can of chickpeas into a vegan + gluten-free chickpea veggie burger! Healthy + plant-based dinner with wholesome ingredients you probably have in your kitchen already.
Ingredients
- 2 cans chickpeas (or 3 cups cooked) drained + rinsed
- 2/3 cup old fashioned rolled oats (NOT steel cut oatmeal)
- 2 cups coarsely chopped onions
- 4 cloves garlic
- 2 tsp cumin powder
- 1 1/2 tsp salt
- red pepper flakes - 1 or 2 tbsp (to taste - I use 2 tbsp)
- 1 tbsp olive oil
Directions
- Step 1 Preheat oven to 400 degrees F.
- Step 2 Place all ingredients into a food processor and process until fully combined.Β Do not overmix. Test salt and spice level, adjust to taste.
- Step 3 Form into 8 burger patties (approximately 2/3 cup each).
- Step 4 Place patties on a silicone lined baking sheet.Β Bake in 400 degree oven for 20 minutes.Β Flip each patty over and bake for another 15-20 minutes. Mine take 38 minutes total.
- Step 5 Serve on a bun with lettuce, tomato, pickles, onion, mustard, hot sauce, avocado, or whatever else you like to top your burger with!
