This recipe is extremely versatile.  You could easily add in any of your favorite veggies including bell peppers, bok choy, zucchini, or even shelled edamame.  You will never miss the real rice in this dish.  The flavors + textures truly are spot on.  Typically, I do not cook with any oil.  However, this one needs just a little butter to give it the authentic ‘fried’ rice flavor + texture without the frying. The mushrooms combined with the ginger + garlic provide a fragrant start to bringing out the rich Asian flavor without the carbs + calories + fat! I have tweaked this recipe multiple times before sharing as I wanted to make sure it was super easy for a weeknight meal but perfect for a family gathering or as meal prep and leftovers! You will thank me after making this, it is so filling + so healthy + soooooooooo yummy!

Tara’s Tips For Perfect Cauliflower Fried Rice With Tofu:

  • Cauliflower rice is widely available now in the freezer section of lots of grocery stores.  I buy a giant bag at Costco of the organic version that way I have a fuss-free + healthy option for busy nights. Be sure to thaw the rice out ahead of time or simply run it under hot water.  You do not want to add frozen rice into your hot wok or skillet.
  • Simple baked tofu is all you need here.  No pressing, no dressing, no frying.  If you want to take it up a notch, flavored tofu is an excellent addition here.  Follow my recipes for Crispy Oven Baked Tofu with No Oil or Crispy No Oil Air Fryer Tofu.
  • Cut your tofu into whatever shape you like BUT they need to be even in size.  Cutting them evenly ensures they all cook evenly.
  • Line your baking tray.  If you don’t, the tofu will stick.  Silicone liner works best but parchment paper will also do.
  •  If you have a wok, time to bust it out.  If not, a deep non-stick skillet will work just fine.
  • Use fresh ginger + garlic + mushrooms! This makes the entire recipe!

Cauliflower Fried Rice with Tofu

Fried rice without the fried + without the rice. Yes, please! This super easy recipe is perfect for meal prep + can easily be doubled or add in more of your favorite veggies!

Ingredients
  • One 14 ounce block of extra firm tofu
  • 2 tbsp vegan butter (regular butter if not vegan)
  • 3 tbsp liquid aminos (sub soy sauce of you prefer)
  • 5 cloves minced garlic
  • 1 inch fresh ginger (finely minced or shredded)
  • 2 cups sliced mushrooms
  • 1/4 - 1 tsp chili pepper powder (to taste)
  • 1 cup frozen peas + carrots (thawed)
  • 3 cups cauliflower rice (thawed and well drained)
  • 1 head of fresh broccoli (washed + cut into florets)
  • Toppings for serving: chopped scallions/green onions, additional red pepper powder, chopped peanuts
Directions
  • Step 1 Preheat oven to 425 degrees F
  • Step 2 Line a baking sheet with parchment paper or silicone liner
  • Step 3 Drain all of the water out of the tofu container and gently squeeze the excess water out of the tofu block with a towel. No need to press.
  • Step 4 Cut tofu into cubes or triangles or sticks of even sizes.
  • Step 5 Transfer tofu to lined baking sheet.
  • Step 6 Bake in 425-degree oven for 20 minutes. Flip each tofu piece over. Return to oven and bake an additional 20 minutes or until crispy golden brown. Remove from oven when done + set aside.
  • Step 7 Next, heat vegan butter in a wok or deep nonstick skillet over medium-high heat.
  • Step 8 Once hot, add in the soy sauce/liquid aminos and the ginger + garlic. Sauté for 2 minutes or until fragrant. Add the mushrooms and chili pepper powder, place the cover on, continue cooking for 5 more minutes over medium heat stirring a few times.
  • Step 9 Remove cover and add in the broccoli, give it a few good stirs. Add the peas + carrots along with the cauliflower rice. Gently mix everything together ensuring all of the veggies are coated with liquid. Cover + cook over medium heat for 5 minutes stirring a few times.
  • Step 10 Turn off the heat. Toss in the tofu, give everything a good stir, ready!
  • Step 11 Top with chopped scallions, additional chili powder for more heat, and crushed peanuts to taste! Eat or serve immediately.
  • Step 12 Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in a nonstick skillet or the microwave.
