Bring this one to a picnic, serve as a side dish for a barbecue, or simply enjoy chilled with a bowl with a spoon! This Avocado Tomato Cucumber Pasta Salad is fresh, oil-free, easy to make, and comes together in minutes if you need a quick side dish for your summer outing!
What You Will Need To Make This Avocado Tomato Cucumber Pasta Salad:
Avocado,
Tomato,
Cucumber,
Red Onion,
Cilantro,
Lime Juice,
Vinegar,
Salt + Pepper,
One Box (10-12 ounces) of your favorite elbow or rotini pasta
No Oil? Nope!

Avocado Tomato Cucumber Pasta Salad (oil-free!)
The perfect plant-based summer pasta salad for BBQ, picnic, or any time of year!
Ingredients
- One box (typically 10-12 ounce box) of your favorite elbow pasta
- 2 avocado (peeled and diced)
- 2 cups diced cucumbers
- 2 cups diced tomatoes
- 1 cup diced red onion
- juice of half of one lemon and half of one lime
- 1/4 cup minced fresh cilantro leaves
- 1 tsp salt
- 1 tsp black pepper (more to taste)
Directions
- Step 1 Cook pasta according to directions on box, drain water, run pasta under cold running water in colander until temperature cools down.
- Step 2 While pasta cooks, prep and cut all vegetables on ingredient list.
- Step 3 Combine avocado, tomato, cucumber, and onion in a bowl.
- Step 4 Top with cilantro, lemon +lime juice, salt + pepper. Add pasta and gently mix everything together. Taste and adjust salt + pepper.
- Step 5 Serve chilled.
- Step 6 If making this salad ahead of time, keep pasta and avocado separate from the remaining ingredients, mix everything together when ready to serve, and leave covered in the refrigerator. Enjoy!
