Cashews + Nutritional Yeast + Sweet Potato
Can you believe it? Soak some cashews, sprinkle on some nutritional yeast, blend them together with a roasted sweet potato and there you have it. A healthy, full of flavor, gluten and dairy free meal that you can feel good about eating. Every time I make vegan cheese out of cashews and nutritional yeast I am in awe. Every single time.Β
Tara’s Tips for Perfect Sweet Potato Mac N Cheese
- Roast the sweet potato ahead of time if you are in a hurry (or microwave it). Don’t make the sauce ahead of time, it gets too sticky.
- Leave out the smoked paprika if you don’t like the ‘smoked’ flavor. If you like the smoky flavor, it’s a game changer.
- Taste test at the end. Add salt and additional onion powder to your liking. Sweet potato sizes vary and sometimes the end result needs more salt.
- Choose any pasta you love, I like brown rice pasta (Jovial) for this recipe, but lentil pasta, white or wheat work great too!

Sweet Potato Mac N Cheese (Vegan!)
Sweet Potato Mac N Cheese made with cashews + nutritional yeast. No dairy, no flour, healthy, easy, gluten free.
Ingredients
- 1 sweet potato
- olive oil (1 tsp/optional/omit if you don't use oil)
- 1 chopped onion
- 4 garlic cloves
- 1 1/2 cup cashews
- 3 tbsp nutritional yeast
- 1 tsp onion powder
- 2 tsp salt
- 1 tsp smoked paprika (optional - omit if you don't like a smoky flavor)
- 8 oz elbow pasta
Directions
- Step 1 Place cashews in a small bowl, fill bowl with enough boiling water to cover cashews, cover bowl and set aside.
- Step 2 Pierce sweet potato with a fork several times, wrap in foil, and bake in 425 degree oven for one hour. When potato is finished roasting, allow to cool and scoop out the flesh.
- Step 3 Heat oil in a medium size pan, add onion and cook on medium heat 5 minutes or until translucent. Add garlic and cook another 1-2 minutes until garlic is fragrant. Remove from heat.
- Step 4 Cook pasta according to package directions.
- Step 5 While pasta is cooking, drain water from cashews and place in blender, add sweet potato, onions and garlic, water, and the rest of the dry ingredients. Blend 1-2 minutes or until completely smooth.
- Step 6 When pasta is finished cooking, drain water, add sauce from blender to pasta pot, heat over low heat 1-2 minutes stirring constantly until pasta is completely covered in the sauce. Adjust salt level, add more onion powder to your liking. If sauce is too thick add more water and continue to stir. Serve or eat immediately, it gets sticky when it sits! Enjoy!
