This recipe for Oil Free Air Fryer Potato Wedges turns out perfect every time! Flavorful + crispy, done in a fraction of time compared to oven roasted. These are also way heathier than deep fried potatoes. Most importantly, you CAN get crispy potato wedges without oil! I will show you how!
I love potatoes! We here at MVF eat potatoes regularly. I do feel sorry for the poor potato who has lost its popularity with the rise of the low-carb craze. Is this really necessary? NO! Tara’s Tips for Perfect Crispy Oil Free Air Fryer Potato Wedges:
- SOAK THEM! 🥔 Don’t skip this!!! THIS IS HOW THEY TURN OUT CRISPY! 🥔 Soaking them removes the extra starch and allows them to crisp better. I know … it adds 30 minutes … but trust me here!
- Shake the air fryer basket while cooking. Just set a timer and shake the basket half way through cooking. You won’t regret it.
- Eat them right away! If you need to save them for someone who sometimes comes home late from work 🙂 , toss them back in the air fryer for 5 minutes and they will crisp back up. Spoken from experience 😉
- Russet or Yukon gold, you choose. This recipe works great with both. Russet potatoes turn out slightly crispier.
- Spice options: thyme, rosemary, dried Italian herbs, Trader Joe’s 21 Seasoning, garlic or onion powder, even smoked paprika works. Mix it up depending on what you pair these with. You need a total of 2 tsp of seasoning in addition to the salt + pepper. You seriously cannot go wrong.
- Yes, they will still be crispy without the oil. If you use olive oil spray, feel free to spray these before you toss them with seasoning. This will give them a little extra coating and the seasonings stick better. Optional but awesome + a little spritz of oil is certainly better than your wedges sitting in a tub of oil deep frying! Oh the calories + fat you are saving yourself!

Oil Free Air Fryer Potato Wedges
Perfectly seasoned, super crispy, healthier than frying! These Oil Free Air Fryer Potato Wedges are so easy + you are going to love them!
Ingredients
- 4 russet or yukon gold potatoes (washed + cut into wedges)
- 2 tsp salt + ground black pepper
- 1 tsp ground thyme
- 1 tsp dried crushed rosemary
Directions
- Step 1 Place potato wedges in a shallow bowl and rinse with cold water until the water runs clear. Fill the bowl with water (enough to cover the potatoes) and soak potatoes for 30 minutes. After 30 minutes, drain the water + rinse the potatoes. Dry them completely.
- Step 2 Preheat air fryer to 390 degrees.
- Step 3 Transfer potato wedges to a large bowl + sprinkle with all spices.
- Step 4 Place potatoes in air fryer basket. Place basket in air fryer. Set timer for 15 minutes. Shake the basket half way through cooking. Potatoes are done when they are browned to your liking. If not done after 15 minutes, cook for an additional 2-5 minutes. Do not overcook.
- Step 5 Carefully remove potato wedges from air fryer, transfer to serving dish + serve with your favorite dipping sauce. Serve or eat immediately.
