Corn chowder with sweet potatoes?!?!?! Yes, please! Made in the Instant Pot?!?! Even better! This Instant Pot Sweet Potato Corn Chowder is made in one pot in under 30 minutes. Dairy-free, oil-free, gluten-free, and packed with wholesome veggies. Best of all, it can be made ahead of time + is perfect for feeding a crowd!
Tara’s Tips for Perfect Instant Pot Sweet Potato Corn Chowder:
- Fresh or frozen corn works with this recipe. Use what you have!
- No instant pot? No problem! Follow the same recipe instructions but instead of cooking for 10 minutes in instant pot. Cook in a covered pot on the stove for 15-20 minutes or until sweet potatoes can be easily pierced with a fork.
- Milk options: dairy milk if you are not dairy-free. Use 2%, whole milk, or heavy cream for a thick chowder. If dairy-free use any unsweetened plant-based milk of your choice. If you want a thicker chowder use one can of full fat coconut milk.
- No sweet potatoes? No problem! Use whatever potatoes you have or like 💛but cut down on the instant pot cook time to 7 minutes for yukon gold or russet potatoes.
- If you prefer a chowder with a more soup-like consistency (thinner), skip the blending at the end.
- Taste and adjust salt/spice level after blending. Add red pepper flakes or more salt to your liking.
- Top with parsley, chives, green onions, avocado, jalapeno, croutons, crackers, whatever you like!
- Store leftovers in an airtight glass container for up to 7 days or freezer for up to 30 days. Reheat in a small saucepan over medium heat or in the microwave.

Instant Pot Sweet Potato Corn Chowder
This Instant Pot Sweet Potato Corn Chowder is SO EASY! Ready in under 30 minutes + vegan! Perfect for meal prep or busy nights!
Ingredients
- 2 cups water
- diced white or yellow onion - 2 cups
- 2 tsp salt
- 4 cloves minced garlic
- 4 cups frozen corn
- 2 sweet potatoes peeled and cut into 1/2 inch cubes
- 1/2 tsp thyme
- 1 tsp black pepper
- 1/2 tsp smoked paprika
- 1 cup unsweetened plant-based milk (I use oat milk)
- 1 tbsp arrowroot or cornstarch plus 1 cup water
Directions
- Step 1 Add onions to your Instant Pot, press the Sauté button, and one tbsp of water and the salt. Sauté for 2 minutes, add garlic. Sauté for an additional one minute. Add more water one tablespoon at a time if your onions begin to stick to the pot.
- Step 2 Add the remaining water to your Instant Pot along with the corn, and sweet potatoes. Cover and set the valve to seal. Press manual/pressure cook and adjust the time arrows to 7 minutes.
- Step 3 When the timer goes off, wait 10 minutes and then quick release the steam by carefully switching the pressure valve to the vent position and turn the Instant Pot off.
- Step 4 Stir in the milk, smoked paprika, thyme, and black pepper.
- Step 5 Allow your chowder to cool for a few minutes. While cooling mix arrowroot and 1 cup cool water until fully combined. Pour the mixture into Instant Pot with the chowder and give it a good stir.
- Step 6 Using an immersion blender, pulse your chowder a few times to blend until desired thickness is achieved (alternatively, transfer half into a blender and blend until smooth).
- Step 7 Taste and adjust salt/spice level. Add red pepper flakes to taste, top with parsley, chives, green onions, avocado, jalapeno, whatever you like!
- Step 8 Store leftovers in an airtight glass container for up to 7 days or freezer for up to 30 days.
