These fajitas are simply perfect.  Easy to customize for picky eaters + can be made ahead of time.  Even better, they can be portioned out on weekends for meal prep! No pan-frying or frying the tofu.  Simply pop everything in the oven and you are done!

Easy Vegan Tofu Fajitas

These Easy Vegan Tofu Fajitas will be loved by vegans + meat-eaters alike! Super flavorful + such a simple recipe!

Ingredients
  • Two 14 ounce blocks of organic extra firm tofu
  • 4 bell peppers (any colors you like, I prefer red + yellow)
  • 1 large onion
  • 2 tsp of cumin, black pepper, and salt
  • 1 tsp smoked paprika and ancho chili powder
  • 1 tbsp of garlic powder or granules, and paprika
  • 2 tbsp lemon juice + liquid aminos or soy sauce
  • avocado or olive oil spray (optional)
Directions
  • Step 1 Drain water from tofu package, squeeze out any excess water. Cut tofu into evenly sized strips and place in a bowl.
  • Step 2 Line a baking sheet with parchment paper or silicone liner, preheat oven to 425 degrees F.
  • Step 3 Cut peppers and onions into long strips.
  • Step 4 Mix all spices together, once mixed, reserve 1 tbsp of the mix and then whisk in the lime juice and liquid aminos.
  • Step 5 Pour marinade over tofu strips, give the mixture a gentle stir to ensure each piece of tofu is coated with the marinade. Option to allow time to marinade for 30 minutes up to 4 hours or use immediately.
  • Step 6 Spray baking sheet with oil spray (if using), place tofu strips on prepared baking sheet, bake in 425 degree oven for 15 minutes. Remove the pan from the oven, flip each tofu piece over and then add the peppers + onions to the pan, give them a light spray with oil. Bake for an additional 15 minutes or until vegetables are light golden brown and tofu has crisped edges. Serve in warmed soft taco or burrito shells, over rice or quinoa, or in a salad. Apply toppings as desired. Store leftovers in an airtight glass container for up to 5 days in the refrigerator.
