I am SO happy when I make something that is better than any version I have EVER had in a wrapper! You can make these with vegan chips and vegan buttery spread if you want a completely vegan, dairy-free, gluten-free dessert.Β  If not, go with butter and chocolate chips of your choosing! You can’t beat a homemade treat ready in 20 minutes AND you know exactly what went into it.

Tara’s Tips for Perfect Chocolate Peanut Butter Cups

In just a few easy steps, these little cuties are ready to go.

  • Creamy peanut butter works best here to get that smooth texture right.
  • No oil needed! Use vegan buttery spread or butter (if not vegan).
  • Don’t skimp on the powdered sugar (it’s not that much!).
  • Add the salt – don’t leave the salt out! Totally changes the taste profile.
  • Be careful not to over-melt the chocolate … keep stirring + use low heat.
  • Follow my steps in the recipe and you will have yourself a sweet, fresh, healthy-ish treat in minutes!

Chocolate Peanut Butter Cups

These chocolate peanut butter cups are ready in minutes, vegan, gluten free, and healthy-ish. They turn out AMAZING and taste better than any chocolate peanut butter cup you might buy in a package!

Ingredients
  • 1 cup creamy peanut butter
  • 3 tbsp melted vegan butter
  • 1 tsp coarse sea salt
  • 1/2 cup powdered sugar
  • 2 1/2 cups dairy free chocolate chips, chunks, baking gems, or broken chocolate bar
Directions
  • Step 1 Prepare muffin tin by placing muffin liners in each cup.
  • Step 2 In a medium size mixing bowl, heat 1/2 cup of peanut butter in microwave for 30 seconds (or stove-top in a small saucepan on low heat until slightly melted and then transfer to bowl).
  • Step 3 Add melted butter, salt, and powdered sugar and stir until fully combined.
  • Step 4 In a separate bowl combine the remaining peanut butter and all of the chocolate chips and melt in microwave at 30 second intervals, or stove-top in a small saucepan over low heat until melted.
  • Step 5 Spoon 1 tsp of the melted chocolate into the bottom of paper-lined muffin cups. Freeze for 2 minutes. Remove from freezer, spoon 1 tsp of the peanut butter mixture into each muffin cup. Freeze for 2 more minutes. Remove from freezer, spoon another 1 tsp of chocolate as the last layer. Top with additional coarse salt, crushed peanuts, granola, or sprinkles. Freeze or refrigerate 5 more minutes and enjoy! Store leftovers in an airtight container in refrigerator.
