These Trader Joe’s Cauliflower Gnocchi Waffles can be topped with your favorite toppings to create the perfect snack or meal! I know I am not alone when I say I love everything about cauliflower gnocchi.  Now, I bring you another way to enjoy these pillowy wonders!

Cauliflower gnocchi waffles for breakfast, of course. For lunch? You bet! For dinner? Absolutely! As a quick snack? Indeed! You can top these savory waffles with your favorite toppings and change up the flavors to satisfy whatever you might be craving! No fussing with a fancy cauliflower pizza crust when you can just thaw out a few gnocchi, toss them in your waffle iron, and pile high with sauce + cheese! How about a fancy tostada, YES! The topping ideas are endless!!!

Tara’s Tips For Perfect Cauliflower Gnocchi Waffles:

Cauliflower Gnocchi Pizza Waffles | My Vegetarian Family #cauliflowergnocchipizzawaffles #cauliflowergnocchiwaffles #pizzawaffles #veganglutenfreesavorywaffles

  • Start with frozen gnocchi, thaw/preheat in microwave for 3 minutes or until thawed and softened.  If you do not use a microwave, spray a skillet with olive oil (or use a light drizzle), heat over medium-high heat for 5 minutes or until thawed and softened.
  • After preheating your gnocchi, give them a light spray or drizzle of olive oil.  Omit if you do not use oil but this does help prevent them from sticking to your waffle iron.  You only need a little.
  • They are done when they are golden brown and crispy! My waffle iron takes 3 minutes but different irons might require an additional minute, check your waffle and keep cooking until you get that golden brown color. Like mine:

  • Cheese: In the photos you see, I used Daiya non-dairy shreds.  This melted perfectly.  Feel free to use dairy cheese if you eat dairy or another vegan cheese of your choice.  You have the option of sprinkling the cheese on top of your other toppings or after 3 minutes of cooking in the waffle iron, sprinkle 2 tbsp of cheddar shreds on the waffle, close the lid for another minute and watch the magic happen.  Like this:

Cauliflower Gnocchi Waffle Topping Ideas:

  • Spinach + Cherry Tomatoes + Mushrooms

    • Heat a small skillet over medium heat.
    • Add 4 sliced mushrooms + 6 cherry tomatoes, 1 cup fresh spinach. Cook for 2 minutes, stirring constantly, then add 1 cup fresh spinach, sprinkle with 1/8 tsp salt + pepper + garlic powder, cook for an additional minute or until spinach wilts.  Spoon on top of cooked waffles.

  • Pesto + Artichokes + Kalamata Olives

    • Heat a small skillet over medium heat.
    • Add 6 Kalamata olives (option to slice in half lengthwise), 6 artichoke quarters, and one tablespoon of pesto.  Cook over medium heat for 2 minutes, stirring frequently. Spoon on top of cooked waffles.

  • Pizza!

    • Heat up 1 cup marinara sauce and drizzle over cooked waffles.  Add shredded cheese over top.  Microwave for 20 seconds in the microwave to melt cheese if desired.

  • Mexican Style Waffle

    • Call it a taco or an open-face burrito or even a tostada.  I call it delicious!
    • Heat 1 cup black beans, top your cooked waffle with the black beans, guacamole, diced red onions, chopped tomatoes, and cilantro, YUM!

  • Grilled Cheese Waffle

    • Cook waffle per recipe instructions until golden brown, open waffle iron, sprinkle waffle with 2 tbsp cheddar shreds, close lid, cook for an additional minute or until cheese melts.  Top with sliced green onions if desired.

Cauliflower Gnocchi Waffles

Trader Joe's Cauliflower Gnocchi transformed into a savory waffle. Topping ideas are endless and so customizable!

Ingredients
  • 12 ounce bag frozen Trader Joe's Cauliflower Gnocchi
  • Spray or drizzle of olive oil
  • Topping Ideas:
  • marinara sauce + mozzarella cheese
  • black beans + cheddar cheese + guac + salsa
  • cheddar cheese + scallions
  • pesto + artichokes + kalamata olives
  • cherry tomatoes + mushrooms + spinach
Directions
  • Step 1 Transfer frozen gnocchi to a plate and spread them out so they are not touching each other.
  • Step 2 Microwave on high for 3 minutes or until thawed out and soft. (If you do not use a microwave, heat in a skillet for 5 minutes or until thawed out and soft. Will need a little olive oil spray or a drizzle to prevent sticking if going with stove-top method).
  • Step 3 While heating gnocchi, preheat your waffle iron.
  • Step 4 Remove gnocchi from microwave or stove-top, give them a light spray or drizzle of olive oil (and stir to evenly coat.
  • Step 5 Measure 3/4 cup gnocchi, place in center of waffle iron, close the lid, cook for 3 minutes or until golden brown.
  • Step 6 Repeat for 4 waffles.
  • Step 7 Top with your favorite toppings! See body of post for measurements of topping ideas. Enjoy!
