Tara’s Tips For Perfect Baked Vegan Pumpkin Donuts
- Baked donuts are not fried donuts. They are never going to be a fried donut. Nor do they pretend to be. They are baked and wonderful. Therefore, they are dense + cake-like. The cinnamon sugar topping is pure perfection sprinkled on top in clumps like crumbs.
- These donuts are most delicious when fresh, but if you need to make them ahead of time, reheat the donuts in the microwave for 10-15 seconds when ready to eat. Also, you can freeze or refrigerate the batter until ready to use.
- Donut pans are tricky to fill neatly. My advice is to pour the batter into a piping bag. If you don’t have a piping bag, use a large Ziploc bag and cut off the corner end and carefully pour your batter into the Ziploc bag. Use the piping bag or Ziploc bag to fill each donut compartment equally. I use the Ziploc bag method and it works perfectly.

Baked Vegan Coffee Cake Donuts
This super easy recipe for Baked Vegan Coffee Cake Donuts is eggless and ready in under 30 minutes. SO yummy, and taste just like coffee cake!
Ingredients
- For The Donuts:
- 1 tbsp ground flax plus 3 tbsp water
- 1¼ cups all-purpose flour
- 1/3 cup organic cane sugar
- 1/4 tsp salt
- 1 teaspoon baking powder
- 2 tbsp melted vegan butter (I use Miyokos or Earth Balance)
- 1/2 cup oat milk (or other unsweetened plant-based milk)
- For The Topping:
- 4 tbsp melted vegan butter
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 1/2 cup all-purpose flour
Directions
- Step 1 Preheat oven to 350 degrees F.
- Step 2 Grease donut pan with oil spray or melted vegan butter.
- Step 3 Mix ground flax and water in a small bowl, set aside until forms into a gel.
- Step 4 Combine flour, sugar, salt, and baking powder in a bowl + stir.
- Step 5 Add in melted butter, and plant-based milk, gently stir again until all ingredients fully combined. Careful not to over-mix.
- Step 6 Pour the batter into a piping bag. If you don’t have a piping bag, use a large Ziploc bag and cut off the corner end and carefully pour your batter into the Ziploc bag. Use the piping bag or Ziploc bag to fill each donut compartment equally. The batter will be thick.
- Step 7 In a separate bowl stir together all topping ingredients. You want some lumps for the crumb topping.
- Step 8 Sprinkle the topping evenly into each donut well.
- Step 9 Bake donuts in a 350 degree oven for 14 minutes or until the donuts are slightly golden on the edges.
- Step 10 When the donuts are done baking, carefully remove from the oven and place on a cooling rack.
- Step 11 Refrigerate any leftovers and reheat for 15 seconds in the microwave.
