Is Okra Healthy?

Yes! Okra is super healthy! In Hindi, okra is known as bhindi and is a very common food found in an Indian kitchen.  Low in calories + high in fiber, okra is grown on a flowering plant and is commonly called ‘ladies finger’.  Additionally, okra is high in folate, vitamins C + K, polyphenols + antioxidants. You know that gel-like substance that makes okra feel slimy? That is called mucilage and actually can help lower cholesterol levels by binding with it during digestion. In most people, okra can help regulate blood sugars as well.  However, diabetics taking metformin need to be careful and shouldn’t eat okra.  The okra interferes with metformin making it not work as well.

Tara’s Tips For Perfect Air Fryer Okra Fries:

  • Wash + cut your okra ahead of time, let them sit out on a glass plate to dry out a bit.  This gets rid of that slimy feeling that okra often have.
  • I am a total fan of oil-free cooking, but this one needs a little spray of oil to prevent the okra fries from drying out. You don’t want too much or your fries will be soggy!
  • Shake your air fryer basket every few minutes.  You don’t want these guys to stick to each other.
  • I fit them all in my basket at once, no single layering required with these fries.

Air Fryer Okra Fries

Such an amazing snack! These Air Fryer Okra Fries are healthy + crispy + make the perfect crispy alternative to traditional fried snacks. If you love fries as much as I do, you are going to love these.

Ingredients
  • 20 okra
  • 2 tbsp chickpea flour
  • 2 tbsp rice flour (brown or white)
  • 1 tsp turmeric
  • 1/4-1 tsp red chili pepper powder (to taste, more pepper powder = increased spice level, be careful!)
  • 1/2 tsp garam masala powder
  • 1/2 tsp salt
  • avocado or olive oil spray
Directions
  • Step 1 Wash okra + dry completely. Cut the stems off and cut each one into evenly sized matchstick shape. Place in a single layer on a glass plate + allow to dry for at least 30 minutes.
  • Step 2 Preheat air fryer to 375 degrees.
  • Step 3 Transfer okra fries to a glass bowl, spray with oil spray + sprinkle all of the remaining ingredients onto the okra. Gently stir until each fry is fully coated with the rice/spice mixture.
  • Step 4 Carefully place the coated fries into the air fryer basket, air fry on 375 degrees F for a total of 12 minutes, shaking the basket every few minutes during cooking.
  • Step 5 Carefully remove from air fryer basket + serve with your favorite dip.
